💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. I'm almost 70, and I remember coconut brittle from my childhood, and the white coconut you used today looked like what was used way back then. That was the best brittle I've ever eaten, and sadly, never saw it again.

At Christmas time, back in the 40's and 50's, my grandpa made peanut/coconut brittle. He called it PECO Brittle. It was delicious. He had a huge copper kettle, huge gas burner, and big wooden paddle. He'd pour the cooked mixture on a long marble table with a wooden edging to prevent overflow, then break it into pieces when it was cooked. This brings back some great memories.
I also make candy for a living and enjoy coming home to watch your videos after a day of making candies!
If you made coconut and dried/dehydrated/freeze dryed pineapple brittle you could call it Tropical breeze, tropical sunset or a brittle colada (pina colada)

Morro’s Nut House in Lloyd Center in Portland Oregon in the 1960’s. They made their brittle in the front window. They used the large flaked coconut and added cashews; the brittle was the same color as their peanut brittle. It was fabulous! I’m getting close to recreating it myself

Just placed an order a couple days ago, guessing the Cocoanut Brittle I ordered was NOT the toasted...have to see when it arrives this week. Something to look forward to trying next time if not.
I see "coconut" and I am immediately intrigued no matter what.
This year, I was using a long candy thermometer(waiting on a new one to come) making jelly. It flipped out, hit me in the forearm but I couldn’t stop stirring. That was just in the 200s. Couldn’t imagine how bad a candy burn would be. I got a chemical burn on my face from cinnamon flavoring in hard candy. Had my face over the pot at the wrong time!

@@HerculesCandy I wasn’t gonna lose my jelly batch & I’ve never made cinnamon hard candy again. 😂I make plenty of other flavors at Christmas time, not cinnamon. My glasses saved my eyes. It looked like I got sunburned upside down.

I’m 72 and remember making a similar candy, no coconut and it came out in a deeper pan so it looke and tasted like Crunchie ,it was good ! I love coconut so know this is too good !

I love your videos and love watching your family make candy. I'm from Oklahoma and I've made it a mission to come visit Hercules Candies some day.
Both my mom and dad cooked at our house. I was always fascinated by the chemical reaction that makes brittle foamy.
Is there a sampler style box of the brittles. Would love to try slot of flavors but no way I could eat through a small bag of each. Plus shipping would cost almost as much as the candy. Putting my money towards stocking fillers hopefully next week.

Coconut and cashew is my vote. Although I can't wait to try the just toasted coconut.
You should try the old fashioned candy, make a nougat with marshmallows, white chocolate, then add yellow box Dots or Jujyfruits to it.
I just love peanut brittle... sadly I am no longer able to eat it... I used to make this when I was younger (sadly, in a microwave LOL) Im curious... when you add the baking soda, why does it expand?? And also, why do you stretch it out after you've smoothed it out???
I love coconut brittle I remember it as a child but I was really worried in the last video of Steve & Cara when the boil over happened they would be burnt I felt so sorry for Cara with her nervous laugh I also do this when I get scared and Steve got upset which is understandable but she wasn’t laughing to be laughing she was upset to knowing that batch was destroyed after all she is still learning something that Steve has been doing almost all his life 👍🏻 up to u Cara but the toasted flavor that can be added instead of adding the white coconut in then add just the toasted coconut right before u add the baking soda ?

@@luzraji76 Dried pineapple would go with a tropical theme, but I’m not sure that the chewy texture would work in a brittle. Banana chips are very dry and crunchy, so should brittle well. But a white chocolate bark with dried pineapple, mango, and macadamias - yum!

Why the untoasted flakes? This is most likely why it is still sticky. Is there a reason you are not just stirring toasted coconut into the kettle?

those coconut flakes looked white. Like the toasted coconut marshmallows they have a golden color to the coconut. To toast coconut you can use the oven however I've always use my cast iron skillet and stir it till it's golden in color no oil needed, just stir it to keep from burning it. Are you just using toasted coconut flavoring?

Do they sell those extra mini marshmallows that they have in premade hot chocolate mix? That would be good to add to things when normal mini marshmallows are too big.

Yum, I know when you poor it out, if you don't swipe it down it stays thick and puffy and crunchy. It's easier to eat also if you have sensitive teeth

All i want is to buy all the different brittle flavours you have but i can't justify paying almost $100 just for postage to the UK. I've had really large items (toys) over 2kg and shipping with USPS was under $30.
That is because perishable items like candy need air shipping. Your toys probably came by boat.
It was $159 for shipping to my location in Canada which is only four hours from Syracuse.

I don't understand why y'alls brittle pours so thick on the table. Then you have to stretch it. When Mom and I made peanut brittle it poured way thinner and was full of bubbles and all we had to do is break it up. Color was a bit darker too.
