    I just made this recipe and it was wonderful. I bought some brittle from st. Lawrence market in Toronto while traveling and got back to NY and finished them. I really wanted more, but the packed ones are hard to find or to pricey. I just got some honey roasted peanuts and followed your tutorial and BAM. Thankyou for this wonderful video ❤❤❤. My brittle comes from a 1908 Rumford baking powder cook book. 2 cups regular sugar. 1 teaspoon butter. 1 cup of nuts. Cook sugar over medium heat till it turns to a liquid, stir so as not to burn. Heat till 300 degrees then add the butter till melted. Pour in the nuts. Pour out on to buttered pan. Now my secret is I don't make it untill the outside temp is below 20 degrees. You don't want moisture in the air, makes it sticky. Then I put the pan directly on the snow or frozen ground..I've never told anybody about the way I make it before. Been making it for years and have a lot of requests every year. By the way it is not blond color but a dark amber color much Like a beer bottle...cheers.

    • @SugarSpunRun
      @SugarSpunRun  2 ปีที่แล้ว +1

      You could break up the peanuts prior. If yours was a little darker it may have just been cooked a little bit quickly or maybe even heated just a slight bit too much, but as long as it still turned out that's the important thing. :)

    Great recipe. Important fact, do not chop up peanuts to try to get a finer easier bite! The sugar syrup absorbed it leaving no syrup left but just a clump of peanuts 😢 Thought I should throw that there so the same mistake doesn’t happened. Made it once already peanuts whole and it’s delicious 😋

    I am 61. For years my Mom would make this type of peanut brittle and sponge toffee. Mom also made peanut brittle that was dark brown and a different texture than the light brown brittle. I told my wife and kids and granddaughters that I would try to make some. I made it 30 to 40 yrs ago but I can't remember how. I seem to remember it needing brown sugar or yellow sugar and a different finish temp. Do you know what I might be thinking of? Thanks,

    How’s it going guys I know very little about peanut Brittlemy wife’s been making it for a couple years now but yesterday her and her friend were making it and it overflowed and it wouldn’t stop overflowing I’ve seen it get very active around a certain temperature to where it rises and it rises until it cools but it can take a while. she tried to transfer it from pot to pot to try to contain it but both of them got burnt hands and so I’m trying to figure out what I could do to prevent something like this maybe a bigger pot safer gloves but even then it still overflowed and got on my stove which you guys know already it’s gonna be a pain to get out any help is appreciated

    what does the baking soda do? .. and what makes the peanut brittle hard, is it the corn syrup?

    • @SugarSpunRun
      @SugarSpunRun  2 ปีที่แล้ว +1

      The baking soda actually helps make it brittle and easy to snap. It's hard because of how it's cooked. Candy has a few stages that it can be cooked to, which will determine how hard the candy is. :)

      That's disappointing. You should make them so homemade peanut brittle so they really know what they are missing. :)

    Why do you add so much exra ingredients?
    Why not just sugar and peanuts?
    It's already fattening enough without the extras.
