    Ingredients:-
    3 3/4 cups bread flour
    1 1/4 water at 115 degrees Fahrenheit
    1 tsp sugar
    1 tsp active dry yeast
    2 tsp salt
    Tomato sauce
    Filetto di Pomodoro-1 can San Marzano peeled tomatoes 28 ounces
    2 cloves garlic whole
    1/4 cup Extra virgin olive oil
    Salt
    Fresh basil
    Parmigiano Reggiano grated cheese
    Vegetable or canola oil for frying

    I just came across your channel, I can't wait to watch more videos, this pizza is from my childhood, my mother immigrated from Ottivano Italy (outside of naples) this was a staple in our home and we'd fight over the last one, my dad would add anchovies to his, Mom couldn't fry them fast enough, thank you so much for sharing this

    Aaaaaahh, this reminds me of being 14 years old and living in Naples. We had a big robust Italian maid who took care of us and would make fried pizza that looked exactly like these. I didn't remember them until I saw your picture. Can't wait to try this. Thank you and God bless.

    I do it slightly different. I have 2 cups of water and a T sugar between 95 & 115°, add the yeast on top, give it 8 min to activate. Then I put it in my mixer and add the flour + salt to that as I mix it.
    I also don't precook the pizza sauce when I make actual pizza. I'll use a hand blender in the can of San Marzanos (with spices) and let that cook on the pizza as it's being made.
    Also, I do freeform stretched out rings for my pizza frite like my Aunt Minnie taught me. 🙂

      Thank you Bill for sharing your recipe. I will try it. Love the free form for the pizza fritta. I use uncooked sauce for my baked pizza but for the pizze fritte it needs to be cooked. Grazie and let’s keep cooking and sharing our recipes for the next generation. 🥰💚🤍♥️

    Oh my God, this looks yummy n best part is very easy to make, can we use mozzarella or cheddar?

      Hi Zareen,
      Thank you! Preference is mozzarella as it goes with the tomato sauce but you can put cheddar if that what you have during the quarantine days. You can just put the sauce and no cheese which goes well :)

      Hi Kerry, thank you for watching and making my recipes. It depends on the temperature of your home. Put it somewhere warm and even under a blanket. It really helps. It should double in size. I just finished taping escarole pizza and with left over dough make zeppole. Let me know how it turns out. You can reach me via messenger if you like.

      @@catherineirene9147 you can wrap bowl in a blanket. Warmth speeds up the rise. That’s what my nonna did 🥰

      Thanks, for the tip....will try it this weekend...I want to make the dough in the morning. Can I refrigerate it before or after it rises.
      Will be having friends over for cards and snacks..
