- Papa P & Chef Dom demonstrate how to prepare amazing fried pizza. This recipe is only one variation of fried pizzas from the Southern Italians. Montanara fried Pizza is a mouth-watering experience, with its origins in the mountains of Naples, Italy. The dough is perfectly fried light golden brown, crispy on the outside and pillowy on the inside. The Montanara fried pizza is served hot yet fresh on the palette with the toppings lathered on once it has been fried, and then baked in the oven. Be warned, the textures on your taste buds might just go into melt down mode when you take a bite of this traditional Montanara fried dough pizza from Naples!

Pizza Sauce:
28 oz. can of imported whole pair tomato (blended up)
2 tbsp. of EVOO
1 clove of garlic
1 teaspoon of salt
3 fresh basil leaves
Neapolitan Dough:
1 & ¼ cup of water
4 cups of 00 flour
½ teaspoon of dried yeast
2 teaspoons of salt
1 tbsp of EVOO

Ok , I am going to ask a technical question, first of all why fry, why is it better than parbaking, do you use your standard dough mix ? ok so more than one . This would be fine but I would say you want to cook more than one . LOL .It is an intriguing process, thank you as usual for the vid...
Frying gives it a unique texture. I use the Neapolitan dough recipe. We have a video for that.

How do you get your meats cut so thin?
When it comes to sausage, be sure you refrigerate it for a couple of hours. The sausage becomes firm and easy to slice thinly with a sharp knife.
