  • Eggplant Parmigiana Recipe | How to Make Baked Eggplant Parmesan | Eggplant Parmesan | Video Recipe
    Ingredients:
    2 large Eggplants or smaller ones totaling 2.5 to 3 lbs (1.100 to 1.400 grams)
    2 lbs fresh Mozzarella sliced
    4 ounces Parmigiano Reggiano (110 grams)
    Fresh basil 10 to 15 large leaves
    For the Tomato Sauce:-
    2 x 35 ounces can of Peeled tomatoes (995 grams X 2)
    2 large cloves of Garlic
    1/4 cup Extra Virgin Olive Oil (55 ml)
    1 1/2 tsp Salt or to taste
    Fresh Basil -5 large leaves
    Batter to dip Eggplants:-
    5 Eggs
    1/2 cup all-Purpose Flour
    (100 grams)
    1/2 tsp Salt
    Fresh cracked pepper to taste
    1/4 cup Milk (55 ml)
    For frying the Eggplant:-
    2 cups Vegetable/Canola/Sunflower/Peanut Oil (480 ml)

I come from a big Italian family but we don’t do big get togethers anymore, just on Christmas Eve and it’s usually lasagna, pasta’s and meatballs. My family always made the eggplant with Italian bread crumbs, I’m very excited to make it your way! It’s my favorite Italian meal but I haven’t made it for my family in a long time.       I’m sure you’ll do a great job with the eggplant and it will be delicious.
      I like breaded eggplants but with no sauce. Just like a cutlet. I sometimes add ham and mozzarella and quickly melt it in the oven. It’s absolutely delicious. Happy birthday to your son. 💖🎂

    I will have to try the egg and flour method. I occasionally bought eggplant parm from a local food truck and I think that is the method they used. I retired and no longer have access to that vendor..
    Never thought of trying the sheet pan method. Great video

    I enjoy your cooking so much, so much like my mother's and grandmother's who came from the deep south of Italy. But there is one comment I must make. When making anything with tomato sauce, doesn't the acid in the sauce have a reaction with the aluminum foil? I have tried covering my lasagna and other tomato baked dishes with foil and the tomato sauce becomes "spotted" with what looks like part of the foil. I now just cover the pan with food wrap and then the foil; this works well. What the "Barefoot Contessa" is to American cooking, you are her equal in Italian cooking. Love your videos.

      Immediately after cooking I remove it from the aluminum tray and store in Pyrex plates.
      I used the cookie sheet on the eggplant because I love how quickly it cooks. Thank you so much for watching 🥰

    I noticed you didn't salt the eggplant to remove the moisture, which I remember my grandmother doing. What is your reason for not doing this step or just is it just time management? Otherwise looks great.

      Hi Mia,
      Over the years I’ve stopped salting the eggplants because I didn’t notice a difference. Eggplants years ago if you didn’t salt them they would be “tangy” not sure if that is the right word but now they’re grown differently. Also, by making the batter it coats the eggplant nicely that no oil gets absorbed.

    Ciao Americana, con che olio friggi le melenzane (olio di semi o olio di oliva)e il forno 45 minuti a che temperatura ? Amedeo

      Ciao Amedeo,
      Per friggere le melanzane preferisco l'olio di semi di arachidi perché ha un punto di fumo alto e un sapore neutro. L'olio d'oliva è ottimo, ma a volte può lasciare un sapore forte se si frigge a temperature elevate.
      Per quanto riguarda il forno, 45 minuti sono un buon tempo di cottura, ma la temperatura dipende da cosa stai preparando con le melanzane. In generale, una temperatura tra i 180°C e i 200°C va bene per la maggior parte delle ricette.
