when i installed synfig on lxpup or bionic puppy(i think i downloaded the appimage) it had white gui like you, but then later i just installed synfig on xubuntu from the software app and it had dark mode right from the start. (I also had dark themed window manager dk if it matters or not.)

Oh so embarrassing but in the appimage version you go to preferences/interface and you can switch on "Dark UI theme (if available)"
