Reason is transformer internal resistance. U need to calculate ac voltage of transformer after loading full. U can add that variation in ac voltage change. For example if ac voltage varies from is 8 volt with 180v input with full 5 amp load , take that as minimum value then take maximum as 12.96 with no load 250v ac input. Then calculate. Good transformer has less load regulation. Txr need to be 1.5 times bigger for example 5Amp dc , u need 7 amp minimum txr. Then variation will be less. Any way thanks for ur interest in the topic.

it depend upon how much ripple is allowed in ur circuit capacitor is just to remove ripple voltage if 1 v ripple allowed u can use accordingly. any way pure zero volt ripple is impossible.

Which capacitor there is one capacitor in series to drop voltage it will have full 300v . after rectifier (4diodes) we will have a electrolytic capacitor. There u get low voltage vdc. that also u need to use zener diode to reduce voltage then capacitor parallel to it.
