    Pesto & zucchini tofu scramble:
    Pesto:
    - 1/3 cup pine nuts, toasted
    - 1/3 cup pumpkin seeds, toasted
    - 2 cups fresh basil
    - 1 tbsp nutritional yeast
    - 1 garlic clove
    - 1/4 cup olive oil
    - juice of 1/2 a lemon
    - salt and pepper
    Tofu scramble:
    - 2 tbsp vegan butter
    - 300g firm tofu, crumbled
    - 1/2 cup soy milk
    - 1 tbsp nutritional yeast
    - 1 tsp veggie stock powder
    Berry breakfast crumble:
    Berry layer:
    - 2 cups frozen mixed berries
    - 1 tsp vanilla extract
    - 2 tbsp maple syrup
    - 1 tbsp chia seeds
    Crumble layer:
    - 1 cup almond meal
    - 1 cup oats
    - 1/3 cup vegan butter
    - 1 tbsp maple syrup
    - 1 cup macadamias
    - pinch of salt
    *bake for 15 mins at 180°C fan-forced
    Choc hazelnut pudding oats:
    Choc pudding:
    - 3/4 cup dairy-free choc chips, melted
    - 200g silken tofu
    - 1/2 tbsp maple syrup
    - 1 tsp vanilla
    - pinch of salt
    Oats:
    - 1 cup oats
    - 1/3 cup hazelnut meal
    - 1 tbsp maple syrup
    - 1 + 1/4 cups oat milk
    - pinch of salt
    Miso butter beans:
    - 1 small brown onion
    - 2/3 cup corn kernels
    - 400g butter beans
    - 1 tbsp miso paste
    - 2 tsp soy sauce
    - juice of 1/2 a lime
    - 1 tbsp nutritional yeast
    - 1/4 cup soy milk (sub plant cream for extra creaminess)
    *serve with fresh spring onion, coriander and/or lime
    Tahini tomato toast:
    Tahini sauce:
    - 1/3 cup tahini
    - 2 tsp maple
    - 2 tsp soy sauce
    - juice of 1/2 lemon
    - 1 tbsp nooch
    - salt and pepper, to taste
    - water, if needed, to desired consistency
    Air-fried tomatoes:
    - 1 punnet cherry tomatoes, halved
    - 1 tbsp olive oil
    - 1 tsp dried basil
    - 1 tsp dried parsley
    - salt and pepper, to taste
    * air-fried for 10-15 mins, until lightly crispy
    Fluffy pancakes with lemon & sugar
    - 1 +1/2 cups soy milk
    - 1 tbsp apple cider vinegar
    - 1 +1/2 cups flour
    - 3 tbsp raw sugar
    - zest of 1 lemon
    - 1 tbsp baking powder
    - pinch of salt
    - 1 tsp vanilla
    - juice of 1 lemon

    Hey, just wanted to share a tip that I learned about miso! It is better added in at the end of the cooking process once the heat is turned off, if you want to keep all the beneficial fermented health properties! (If you are using it for flavor only, then it probably doesn't matter!)

    Love these “whole week of food” videos! And generally speaking I’m so glad you’re back with regular content!! I’m just always soo happy to see a new video of yours in my feed ✨ I’m not a huge breakfast person at all but still really excited about these recipes! Love how it’s not all oats and that you include savoury options as well! The hazelnut oats and tofu pudding look DELICIOUS and omg the last one was truly pancake *perfection*
