    Thanks for these ideas. New to the vegan lifestyle. I ALWAYS struggle with what to eat. This concept is new to me, so I backslide at times. Though I don't want to for health reasons. I need ideas that aren't very challenging.

    Hi Nikki, new Subbie here, so I made the white bean veggie scramble, I made it for dinner. I absolutely love it. I tweaked it a bit, I used impossible meat, I added onions and sage seasoning too. This maybe my go to meal! Thanks for sharing!

    I didn't have maple syrup so used honey instead and used coconut flour instead regular one. I am loving my breakfast now😋 thank you for sharing ❤

      And I made the crumble last week with frozen mixed berries and cranberries because that’s ball I had at the time in the freezer (because it was so tart I had to add some Stevia into the berry mixture) but that was soooo good too with soy yogurt on top, and was still amazing cold the next day. The only other change I made was I also added hemp/chia/flax seeds to the crumble mix

      Perfect! I think they have great flavor! I use 3 of them, remove the casings (optional) and then just crumble them into the pan to crisp up. Excited to hear what you think! Hope you enjoy 😊😊

    I will definitely try both of these.
    I go by the geno-type diet. My geno-type (number 4/explorer) should not have eggs and very limited dairy(I should only have ghee, mozzarella, ricotta) so some vegan recipes are great! Thank you!

      Quinoa flakes is the most common substitute for porridge, I've seen people use cous cous too, or regular quinoa.

      You could do a classic crumble topping instead. That's usually a blend of butter, sugar, salt, and flour so I would just use vegan butter instead. For this though, I agree with Juliet, using quinoa flakes may be a great way to go! 😊

    This is my first time watching one of your videos and I need to make a comment about the sound. I clicked on this video early in the morning on my television and the volume from the introduction music was so loud that I needed to turn my television down from volume 25 to volume 9.
    When the introduction ended and you started talking I needed to turn my volume back up in order to hear you. You should balance the sound.

      Good question! I would use cornstarch instead. About 1-2 tbsp to help thicken the blueberry juice 😊 Hope you enjoy!

    2 questions about the blueberry crumble
    1. Are the oats regular rolled oats? Are they soaked or used raw?
    .2. can I replace almond butter with peanut butter?

      Hey ☺️ rolled oats are regular old fashioned dry oats and peanut butter would work too! I prefer to use almond butter because the flavor is more neutral and really lets the blueberry flavor shine in this recipe but peanut butter adds more of a flavor (a delicious one though) The end result will just be a little different. Any nut butter will work well though! And peanut butter is one of my favorite foods of all time so I say go for it! Hope you enjoy! 💛💛

      Totally! I like almond butter for this because it's more neutral tasting, so the blueberry flavor really shines. But adding peanut butter is also delicious and it makes this taste more like a pb and j 😊 Both ways are good! Let me know which one is your favorite 🫐

    Hi Nikki, those recipes look delicious...I can't decide which one I'd like to try first, but I think the blueberry crumble will be it. I can never guess the right baking dish size in a recipe though. What size is this dish? (And thanks for the new yummy recipes to try! )

      Hey 😊 I used a small casserole dish that (annoyingly) doesn't have the dimensions printed on the bottom lol but you can use an 8x 8 square or a 9x5x3 loaf pan. I like something with a little more surface area, so the square would be ideal if you have it! Hope you enjoy!

      New favorite breakfast-I make it by the 9x13 baking dish and freeze; hubby is obsessed. So far I've used pear puree and strawberry puree in place of applesauce(we eat seasonally from our local farm) and the results are divine!

    Hello do you have recipes for oatmeal bars anything. I am on intermittent fasting lost 55 lbs. I am no meat fish or eggs person I do use milk for my coffee tea etc. Just for protein. What’s exciting on your menus please advise I have gotten into this rott not interested in any food I make stuff but after cooking and seeing it I am full and cannot eat.

      For the berry part, yes, but I would sub corn starch if instead possible. 2 tsp is all you’ll need. For the crumble topping I would stick to oats ☺️ Hope that helps!

    For the first crumble recipe - I am allergic to bananas but was able to substitute canned mashed pumpkin. Tastes yummy! 💕😋💕

      Normally apple sauce is a 1 to 1 substitution by volume, but the moisture content might change it. So you do have to go by ear a little bit.

    I just prepped the crumble for tomorrow morning! I subbed out the almond butter for tahini and just added a touch more agave nectar :) I also tripled the recipe lmao, it looked so good we have to make a ton 😋 thank you for re introducing me to veganism ♥️

    Mush one ripe banana
    1/4 cups of almond butter
    1/4 cups of maple syrup
    1 cup of oatmeal
    1/4 teaspoon of kosher salt
    1/2 teaspoon of cinnamon
    Mix together
    Optional: pecans or just nuts in general to make it crunchy (you could break them into small pieces)
    1 bag of frozen blue berries
    1 teaspoon of flour (cover the all the blue berries with the flour)
    Now put the mixture you put aside earlier and dump it on top of the blue berries and spread it around to cover the whole thing
    Bake at 375/190°C for 45 mins

      Looks & scrumptiously delicious but rhe frozen blue berries are going to be extremely expensive here in Jamaica. Will see if it's possible to make it.

    I usually skip breakfast because I never know what to eat but that scramble looks AMAZING. The crumble does too but I'll enjoy that as a dessert 😊

    I realized while watching this video yesterday that I just so happened to have all the ingredients for the scramble (save for substituting kale for spinach), so I made it! It was incredible! 10 out of 10 for sure. Looking forward to eating the leftovers with an English muffin on the side. Hearty, flavorful vegan food at its best. Thanks Nikki!

    Wow! This recipe was absolutely amazing. I made it with regular Italian sausage as I am not vegan and could not find vegan sausage at my local store but I am very excited to try this recipe again to put into a pita with hummus and a spring green mix tossed I'm vinaigrette.

    You use 1 cup of oats in the very first recipe. I feel a little tricked😀. I wish I could eat oats... bummer. But, these recipes look great.
