The funny thing about Ultra Instinct and Ultra Ego is that they have no set multipliers, they as transformations and techniques both grow in accordance to adapt to how strong an opponent is. Goku with MUI was initially weaker than Limit Breaking Jiren in the Anime ToP as he was outpowered, but as he adapted his body and chi grew to match his power, and even surpass it. It was even mentioned by Jiren that UI Omen Goku had "Generated a massive amount of energy to face him, and that he should respond in kind with an attack of his own"
is just like ssjg, goku wasnt initially able to use all of the power and took some time to reach all the power of the form, as for ui and mui, its something that takes time, and goku reached the beginning of attack and defense, but that was already enough to face jiren, that's how op mui is, a lot of efficiency, no hesitation, and attacks and defense with full power, the only way to win aggainst mui is to be too much strong to mui to react, mui depends of the body, energy supply and time that the body can sustain of the user, and there is a limit to it kinda
