Feeling very proud of myself this afternoon - all thanks to you! Had to take my daughter to the barbers today (her choice - she has a short hairstyle and prefers the way the barber cuts it! I prefer the price £9.50 instead of £30+ at the ladies hairdresser! She amazes me, at 16 there's no way I would have even set foot in the barbers, never mind get in the chair. I feel this new generation is very brave, open-minded and shows immense promise for the future of the planet) and afterwards walking through our little town found myself looking longingly in at all the cosy cafe windows with the people inside enjoying their coffee and cakes...But then I remembered this recent video and how quick and simple you made the baking. So instead we came straight home, made my own fancy coffee and a batch of flapjacks! I have now made a resolution to try all your different bakes, so that there is always something treaty in the cake tin at home, that will hopefully keep me out of the expensive (though very welcoming and lovely) cafes in future xxx

I love the recipes, Jayne. The flapjacks was really interesting to me, because in America we call those granola bars and flapjacks are kind of like a pancake. I love hearing the differences. 💕

This is why I love your channel. Simple, easy to make, no fuss food, none of that fancying around with ingredients I've never heard of or ones that cost an arm and a leg to buy and you only need a tiny pinch. Plus I like the fact that your cakes look like my cakes! (Not professional, just lovingly homemade.) The only problem is, what to bake first, as I ❤️ all of them. Xx

I love all these recipes!!! I especially enjoyed the flapjacks and cake recipes. I've baked many many cakes in my lifetime and want something easy now. These are perfect for retirees as well. I just don't have the patience for recipes with a lot of ingredients anymore, the easier, the better. These certainly fit the bill. I would love to see more! Always enjoy your videos. When I go off my budget, or start to spend, I just click on one of your vides and am back on track. You are very inspiring!

I am one of the people who have to mix the sugar and butter first, although I will add vanilla to that if the recipe calls for it. I have been told that it makes a lighter cake because the more you work flour it can become tough. Having said that, all of these cakes looked light and moist, sooo maybe I’ll try this method. Thanks. Jane!

What a difference a country makes. In America, flapjacks are just another name for pancakes or hotcakes. Although I have to admit, your version looks delicious!
Another small difference is that we call it self-rising flour, as opposed to self-raising.

3 lovely but simple treats.I am trying to avoid sweet treats to keep my weight down but I could be tempted by any of those. I totally agree cakes and pastries in the shops cost a fortune some of them work out more expensive pound for pound than steak. When I had a family at home and money was tight I would make these type of things every time I had the oven on to cook other things. I also use to use sponge cake as a hot pudding with custard. My family thought we were posh because we had pudding and custard which in fact only cost pennies.

What you call flapjacks, we call granola bars in the USA. We add things like chopped dried fruit, chopped nuts or mini chocolate chips to the mixture before baking.
I’m particularly fond of one with chopped dried cherries, chopped pecans and mini semi-sweet chocolate chips. 😋
Another favorite has chopped dried apricots and chopped almonds. When it is completely cool, it’s drizzled with some melted white chocolate.

My old good housekeeping recipe for flapjacks.
      Makes 16-18
      2oz butter
      2oz Demerara sugar
      3 tablespoons golden syrup
      4oz rolled oats.
      Grease a 7inch square tin.
Melt butter sugar and syrup in a saucepan.
Pour in rolled oats and mix well.
Turn mixture into prepared tin and press down well.
Bake in oven at 350 degrees Fahrenheit (180 degrees centigrade)
For approximately 20-25 minutes until golden brown.
      Cool slightly in the tin.
Mark into finger shapes with a sharp knife and loosen round the edges,
When firm, cut right through and using a palette knife, remove the flapjacks from the tin.
Obviously adjust your oven times as you see fit as a lot of ovens are different. Main clue is the golden brown colour.
      Happy baking.

Jayne can I ask you why are you didn’t use a knife dipped in water to make it hot to spread your I think? I find it much better to do that you can get it right to the edges and a lovely finish on it. I enjoy your channel and the recipes are helpful I am Just catching up as I only found your channel a few weeks ago keep up the good work

They look good. I bet they taste good. Unfortunately as a pre-diabetic its not allowed. As a renal nurse I am terrified of Diabetes. 50% of all kidney failure is from Diabetes (carbohydrate intolerance). But I do have a few squares of Lindt 100% dark chocolate every few days.

I'm suffering from deprivation over here too!
But, at least I can feel my toes again.

I've been trying to find the recipe for flapjacks but the link has failed to upload.... I really like chewy flapjacks and mine are always hard and brittle 😏

    American: flapjack=pancake
I’d call this a granola bar. Lol.

Distinct difference but I don’t think Americans know how different a granola bar tastes in comparison to flapjacks unless you have tried them.

I've eaten granola bars and flapjacks, they might look similar but they are very different. Thanks for commenting.
