Have you ever tried canning it? The nchfp has instructions for apple juice, so I would be tempted to try this as well. Would be great to have on hand for, say, sweet and sour chicken.

Ooo that's interesting! No, I never thought of canning it! What a good idea! It may have to be pressure canned since it is so full of water. Next time I make it I should test the pH levels

    1. Have you tried cooking the cores also? Does the core add sweetness and fibers?
    2. Have you tried a slow cooker instead of stove top?
    3. How clean can you get the pineapple skin? I don't think I can wash pineapple skin with soap like an orange. Asking because I'm getting fruits that have been lying around from the food pantry.
Thanks I love giving 2d life to things. The jam option is great idea since food pantry gives away lots of them.
I found this video after I threw away my skins. My tongue and lips were all raw from trying to eat the remaining fleshy parts from the skin. Got pricked by the throney skin and acidic juice. Boiling it would definitely save my tongue from this torture so will do this next time.

Yes! Add the cores if you have them. It provides extra flavor.
I have not used a slow cooker. If you try it out tell me how it worked out

Can you make this with honey? Stevia?
