    • @kendraskreations

      Thank you so much! Yes, the eggplant has seeds - I kept them in for this recipe. They're edible and generally safe, though they can sometimes be a bit bitter or have a slightly crunchy texture. In younger eggplants, the seeds are small and tender, so they’re less noticeable. As eggplants mature, the seeds can become larger and more prominent, which might affect texture and taste. Removing eggplant seeds is usually a simple process. Here’s a method to do it effectively: Slice the eggplant in half lengthwise or into rounds, depending on your recipe. Use a spoon or a melon baller to gently scoop out the seeds. If you're working with halved eggplants, you can also use a small spoon to scrape out the seeds and some of the flesh if needed. If there are still some seeds clinging to the flesh, you can rinse the cut pieces under water to remove them. Pat the eggplant dry with a paper towel to remove excess moisture. For some recipes, like eggplant Parmesan or baba ganoush, you might not need to remove all the seeds, especially if they're small and tender. If you're concerned about bitterness, salting the eggplant before cooking can help reduce it, but it's more about the whole texture and flavor balance than just the seeds.

    In the video, you said you water bathed canned them for maybe 10-15 minutes. I was looking in a canning book and it says to Pressure can for 1 hour and 10 minutes for pints and 1 hour and 30 minutes. Your time seems very short, but the canning book time for greens seems awfully high. Can you explain maybe why the difference?

    • @kendraskreations
      @kendraskreations ปีที่แล้ว

      The times you mentioned are for pressure canning, and I am pickling them so they are waterbathed, so the time is shorter. Since I'm adding the vinegar to change the pH it is no longer a low acid food and can be waterbath canned.

    1. Have you tried cooking the cores also? Does the core add sweetness and fibers? 2. Have you tried a slow cooker instead of stove top? 3. How clean can you get the pineapple skin? I don't think I can wash pineapple skin with soap like an orange. Asking because I'm getting fruits that have been lying around from the food pantry. Thanks I love giving 2d life to things. The jam option is great idea since food pantry gives away lots of them. I found this video after I threw away my skins.
