    Your channel is a breath of fresh air. You approach your tasks with such patience, grace, and an eagerness to learn something new that it is inspiring. That helped me find the motivation to keep going on my own journey towards homesteading. Living in the suburbs, it can be easy to fall back into the many conveniences to which I had grown accustomed.
    You're showing so many people, myself included, that it's possible to homestead without a massive farm. I'd like to have acreage someday but you've reminded me to keep turning my waiting room into a classroom. I am so glad I found your channel. Thank you for doing what you do. 😊

    Tip: for a really festive touch to the sweet potatoes - add raw uncooked (washed) unsweetened cranberries to your sweet potatoes. They absorb the syrup right along with the potatoes and provide lovely pops of acidity and color. They're terrific heated in ramekins as a festive side dish. Love your content - Keep up the good work!

    Once again, you hit it out of the park with this video. Over the holidays, when the turkey is at its best price, I buy several birds (7) and canned the turkey, and make dozens of quarts of turkey bone broth. It was great to see your husband again; thank you for your service to our country. I am not sure which recipes I loved the most but the oatmeal muffin for breakfast and the potato lasagna were my top two.

      Rich you are a man after my own heart! THAT'S exactly how you do it! I can't imagine not grocery shopping this way (along with using food preservation methods like canning, dehydrating, and traditional cooking skills like rendering your own fats) to truly make sure maximize everything to the full. Rich-that potato lasagna will have you on your back snoring if you eat more than one plate (but it is delish) AND the oatmeal muffins (recipe in description box) truly keep you full!

    I made the salmon kimchi subs last week... and in the spirit of "-if anything is excellent or praiseworthy--think about such things" I had to tell you, what an utter triumph of a meal!!!     One of our kids has adhd and so removing a lot of the processed foods was one of the steps I decided to take. Almost immediately I could tell the difference. Eating seasonally was also a step in the right direction. When we started seeing the grocery bill get higher and higher, cutting back and removing snacks so that we could focus on seasonal and legit foods for meals helped so much.

    You're the only other person I know that makes fried cornbread the way my mama's mama taught her! I love fried cornbread like this, with just salt and water.     I grew up in East Texas and my dad’s family always had hot water cornbread and biscuits on the table at lunch. They added salt, a little bit of sugar and some bacon grease to the cornbread. So yummy!

    When we moved to my in-law’s house, I kickstarted my canning. After tossing an entire batch because of hard iron/sulfured water (it was horrible), I started canning my veggies in chicken broth. My family loved it! We eventually got a whole house water system but the broth is a staple in my canning of savory foods.

    When canning sweet potatoes, if you will peel them twice (yes that's righr) that will remove the white coating that is left from between the peel and potato. This makes an amazing difference in the flavor if you don't want to or don't have time to roast them.

      BECKY! This tip is INVALUABLE and I will fold this into the next time I can sweet potatoes (which I plan to next weekend). Years ago when I first canned them and afterwards determined that I didn't like them because of an off metallic taste, I had given up on having them on my shelf. When another farm girl here on the channel shared she roasted them, I told myself to give them another try and as you saw, I couldn't believe the night and day difference. THANK YOU for this tip which I will surely mention in my March pantry chat and any time I can sweet potatoes!

    I always learn something new from you! Like the potato skins! Yum! I’m definitely making those muffins! The lentil, lettuce wraps, another yum! I’m working on getting more lentils into my diet, due to inflammation. Everything you made looks absolutely delicious! Love seeing your husband and dad as taste testers! So sweet of you to have all your dad’s favorites on hand! When my parents were alive, I’d do that for them too! Looks like fun hikes! Also, growing up, we had raw milk and my mom always liked to skim the cream off the top. We lived around the corner in the country from a dairy, and my dad was friends with the owner and did odd jobs for him, so we often got free milk! The food we ate back then was so much healthier! I am going to get some of that good milk from the farmers market to try! Great deal on the coffee maker! Girl, you find the most amazing deals on marketplace!

    OK, I committed too soon because there’s so much more I want to say. All this food looks so amazing but what I love is your relationship with your dad. I lost my dad in October.     Love these recipes! Can’t wait to try some of these potato dishes. 😍 Also, quick tip. If you keep regular plain Greek yogurt on hand, I just add some to a small container with some lemon juice, stir and keep in the fridge as a sour cream substitute. I use Greek yogurt for a few things, so I do this instead of also buying sour cream. :) A lot more available to people who don’t have probiotic starter. 😊

    One of the things I learned from the Bible of meat preservation, "Charcuterie: The Craft of Salting, Smoking, and Curing", is the art of brining. I learned that brining turkey legs, both the thigh and the drumstick, before roasting, makes for the juiciest and tastiest of meats! The 1st time I made it, I only had a toaster oven, and it was ONE whole leg. My true love and I almost growled at each other over that leg! It was so delicious, and I've truly regretted since that I didn't write down the exact spices and their measures because I've never been able to duplicate that exact taste ever again.
    Regardless, I learned to brine other meats, and to vary my brines according to how I want my meats to ultimately taste. Even better, I can prepare my brined meats any way I want after brining, even stewing some, with excellent results! ❤ That book was an excellent investment that my Mike left me.

    Oh my goodness, those crunchy potato skin chips sound so good! I’m wondering about trying it with sweet potato peels, too. And I love your potato lasagna noodle swap. I’m having to go temporarily gluten free (dear Lord, please let it be temporary, I miss sourdough already), and the GF noodles just make me sad. The lentil lettuce wraps sound like a good option, too. I had no idea you could render turkey skins like lard either. It always amazes me how many good ideas you can cram into one video!

      BECKY!!! This totally works with any kind of potato skin! Don't over do things with your oil or they'll get soggy/need longer to crisp up. Darlin' I'm praying your GF diet is temporary, too--but fight the good fight so that you can calm your inflammation, or whatever it is your trying to address. And yes, the lentil wraps are so good as a 'dumping ground' for leftovers (you know how I feel about not throwing anything away). And yes, turkey oil is a wonderful product. Even that 'small' amount is enough to cover plenty of meals that don't require deep frying. Quality store bought oils are pricey (not complaining, you get what you pay for) so leveraging the fats from ingredients I'm already purchasing is a money saving GAME CHANGER (plus you can tuck 'em in the freezer). Always good to see you Becky :)

      I’ve been saving the fat drippings in the fridge from our smoker. Mostly Brisket & chicken drippings. Delicious fat replacement!

    GIRRRRRLLL!! the blackeyed peas and collards with cornbread so spoke to my southern heart... I would have a two small separate bowls one for collard pot liquor and one for peas pot liquor and have the cornbread with each... now that is some amazing eating!!! enjoyed the video!!

My dad eventually crumbles the cornbread into the greens and beans, sprinkles a lil' sugar on the collards...I mean its like a whole production!     Thank you! Love this video. Economics has forced home cooking back in focus! Remember store packaged foods are full of sub standard foods & lotza chemicals to make it last years on a shelf- filling but not nutricious. Homemade tomato sauce is so easy& has no rancid oils or modified food starch ( no idea what that is). Carmelize onions, add canned tomato & sauce, fresh garlic, bell pepper, mushrooms, zuchini carrots- whatever you have. Chop it all real small. I like to add a pinch of cinnamon & some broth to lighten the acidy tomatoes. You can jar this sauce- but if you use low acid veggies, use Pressure Can or freeze it. Dont water bath. Delish.

    Awwe. I just started watching your videos a couple of days ago, and this is the first one I've seen with your husband in it. After hearing you speak about him and your relationship together, seeing it through our video experience is just so heartwarming. Y'all are too cute. Just the subtle body language just suggests how you both really just click and the energy you share feels evergreen, for lack of a better word.     I love the way you interact with your dad. It reminds me of me and my dad. My dad really enjoys my cooking. He says it reminds him of my moms cooking, she passed in 2016.

      Haha, honey its real! Trying to conjure up the childhood tastes and look of meals made by my grandma, great-grandma, and aunties who were waaaaay better cooks than me is no joke, lol! Luckily, I've 'hacked' that a lot of the ingredients they used weren't exclusively store bought--its things like cooking in a cast iron skillet from the bacon fat leftover from breakfast, using homemade butter from a local source, the freshest of ingredients from your garden, pouring over a homemade stock with bits and bobs you let simmer and season to a degree you just won't find in a store, those kinds of things. I don't always knock it out of the park and there are plenty of recipes I'm still "perfecting" but its nice to know I'm on my way! Thanks for noticing, friend!

    I just stumbled upon your TH-cam videos yesterday and I am just blown away by how resourceful you are and how amazing your recipes are. I love the clever tips that you share and I will certainly be using them around my home.
