@@GazaAli Kofta is meant to be a little crispy on the edges and a nice solid well done cook throughout, even on the dry-ish side. We do the same exact thing in Greece, it's called keftedes. Guess it's preference, but how he did it is not traditional, he made undercooked lamb patties with kofta seasonings. If you know, you know.
