Hello I'd like to introduce myself, my name is Marc Briones I'm a retired Exec.Chef from America with Filipino heritage. I'm so happy with a tear in my eye that two Filipino men had the courage to move Filipino cuisine forward to a new plateau. This is the genesis for other future Filipino chefs towing the line forward. I hope this new generation will have the courage and fortitude to pursue perfection and never settle. I could not help but shed tears of joy watching this feature of Hapag MNL. I could not have been more proud being a Filipina seeing our culture, soul, and food elevated in such a way. I'm fortunate enough to have experienced Hapag's dry run on the ground floor of Rockwell in early March this year... predictably, not only will Hapag be a great success -- hopefully, it will also make the Philippines a destination in the gastronomical map. I can't wait to come back and experience it again in its new space on the seventh floor and enjoy cocktails at its foundling bar - Aya... wishing the team the very best of luck! ❤

This is amazing! As someone who worked in the hospitality industry in the states I love to see this happening in the Philippines. What got me is when family meal and everyone is eating together.
Before hindi ko ma gets yung mga fine dining na yan at ang mamahal ng presyo with their kakapiranggot na servings. Sabi ko nga, ano yan pa sosyal sosyal lang? But after watching this episode, there's more to it pala. Yung mga utensils na pinaglalagyan ng mga pagkain at inumin na siniserve nila ay expensive din; for what? to value food, at ang kumakain nito, na it's not just 'food lang' but FOOD. Also, hindi basta basta the way nila I prepare yung food. Sobra din nilang bina value yung food to the point na kailangang sabay sabay kayo kakain as family, kahit na hindi ka kakain basta yung presence mo ay nanduon around the hapag. Dami kong natutunan sa episode na'to. 🙌

Honestly, this really feels authentic to the Filipino spirit in spite of the Haute Cuisine trappings. I especially appreciate that there was never once a "yes, chef!" call to order that is found in places of this caliber. I hope for the best for this team, even if I might not be able to visit their establishment. I hope they inspire other restauranteurs to strive for the same philosophy with food, sustainability and hospitality.
As an aspiring Chef of Filipino descent, seeing restaurants and dining concepts that showcase our culture with such passion is truly inspiring. Is the head chef the same John Kevin Navoa na suspect sa hazing case sa Benilde noon? Got curious kasi who the head chef is and when I googled, isa yan sa lumabas sa results. edit: I'm disappointed that Featr censored my comments. Someone from reddit confirmed though (source: court decisions), that the chef is not a respondent in the case, and also wasn't charged with anything in connection to the fatal hazing.

The team's achievement is commendable and certainly something to be proud of. However, the next challenge for this team is to make this accessible to the broader population. What's the point of curating food for Filipinos if only the nouveau riche can enjoy it? I don't want to make this commentary socio-economic, but let's call a spade a spade: fine dining often highlights the disparity in our society between the poor and the rich. We need to think about how we can bring this culinary excellence to more people, ensuring that a wider segment of society can appreciate and enjoy these creations.
This is like demanding Ferrrari to make their cars cheap. Stick to cheap Toyotas. No one in the fine dining industry has any responsibility to make it accessible to anyone but the select few who can afford. Fine dining usually involves cooking with exotic meats and expensive ingredients often paired with pricey wine. It is not for everyone and should never be.

This is a good feature, tbh. Although, I had fine dining experiences especially in New York where I’m from, it’s not my favorite scene. Foods are superb looking, it tickles all your taste buds, but after a 28-course meal, you’ll end up hungry again on your way home. It’s just a gastronomic show for your palate.

I love series like this. I love food, so knowing each process and even the smallest thought that goes into providing a great dining experience is amazing. Eating a well-thought-out dish is like experiencing a work of art, just as a painter carefully selects colors and brushstrokes to evoke emotions, a meticulously created food is a bite of sensory journey.
We always made it a point to celebrate family milestones and birthdays at Hapag, especially since it was near us at Katipunan. Still looking forward to dine here again at Rockwell.
Philippines has a world class traditional cuisine ( not just Pampangan , but Malay spice trade ) but also world class Martial art ( knife fighting ) that is American Elite Navy SEALS use , so protect it and advance it
