  • Hey guys! Welcome to another collab video! I have with me Erwan, the founder of @featrmedia, one of my favorite TH-cam channels in the Philippines. In this video we experience Filipino fine dining as we discuss about Filipino cuisine.

      Mahal and overrated.. well atleast for a Pinoy like me. But if I want to have a date I'm sure Hapag is one of that place for a dinner date with your special one who likes Pinoy food.

    Erwan has a wider knowledge of Filipino food than most of us. He can talk lots of authentic local dish and many ingredients just like the many islands the Philippines is made of.

    Erwan was correct. We need to accept that the average (usual) filipino food will not live up to the international palate. We need to identify what makes us unique and market it as something fun and world class.
    Let us support young and talented chefs!

      Exactly, the problem is people love to gatekeep the standard food that we used to eat, if someone put ginger to an adobo, one for sure in the comment will pick it out saying adobo don't have ginger.

      It should served the food properly to make it internationally as he said. Hapag is doing it, they should have this kind of restaurant in other countries.

      Nah. It's been tried many times and failed. They go in the direction of trend of which we all know is not sustainable. Palitan ang itsura pero wag palitan ang lasa. Sa ibang bansa kahit ano pa gawin sa pagkain authenticity pa rin ang habol ng mga tao. People flock to trendy restaurants but in the end true foodies will clamor for authenticity. Kadalasan kasi mga tao pakiramdam nila alam ang tamang pagluto ng pagkaing Pilipino when in reality mali luto nila, tulad ng pakbet ng Norte. Stop reinventing Pilipino dishes, lumalayo na sa original recipes.

    I’ve talked about this to my fellow Filipino friend that something we both agreed. That why Filipino food didn’t make up globally because it has authenticity and quality. The main drawback is the native ingredients and freshness that has to be from the Philippines. Our ingredients has genetic component coupled with the unique agro-climatic condition that help bring about its superior fruit and vegetable quality.

    wow. i didn't know Filipino foods can be served as fancy as that. if only a lot of restaurants are established in a way that they present the Filipino foods with authenticity, it could have been global as well.
    i wish i could visit that restaurant someday.

And yes, there are a lot of better materials to access when it comes to deeper stuff about our country and even Erwan would agree to that. Pero not everyone is to reading, and would prefer accessing it on a better medium like these vlogs that we're sharing together now.

    Gosh I’m Filipino but I still need to learn more about our cuisines. This is really educational. Erwan is really good in explaining and describing the different diversity of our food. I’m definitely going to visit that resto for the experience when I go back home. Thanks Jessica and Erwan 👍

    Okay.. can we all agree how this lady who made a series about a mural project on a public wall is now living the time of her life? Like, she's doing what she wants.. and now being recognized by other bigger personalities/channels.. she's a definition of never giving up is worth it.. not saying this is her dream, but I'm sure this is what she enjoys doing for now.. she's always cute and feels genuine in all her videos.. the best thing is she's not acting stupid or childish in all her content.. in fact, her's is more like informative most of the time.. and back then, she's still able to reply and react on almost every comment..
    So i guess, that's the downside if your channel grow..your interaction to your audience will be limited..but atleast your content doesn't disappoints..so i think it counts as a form of appreciation to your followers/supporters/ subscribers and audience..
    You're still far ahead.. but you've come really far from where you started.. road to 1M is not that far away anymore..☺️

    HAPAG should definitely venture out of the country & to showcase what the Filipino food has to offer. One of the best presentation I have seen so far. This makes me want to book a flight to MNL just to eat in Hapag with my loved ones! 😍

    Erwan’s right. According to one of our course readings during college (I’m not 100% sure if it’s by Nick Joaquin or by Cesar Adib Majul), Spanish historians recalled being invited by a rajah to eat with them during a festival. One of the foods served is a sour soup or sinigang in modern years.

    The video is so informative, I liked what erwan said about not caring about the labels and just trying new things, I think a misconception we commonly get is that when we see something that's made like in a new way or something we're not familiar with, our common response would be that oh that's not supposed to be how it's made, or it's not traditional anymore or the essence of that something is not preserved anymore, it's not going to taste like how it's supposed to taste etc etc because it was done/made in a different way, but there's no harm in trying things that were made differently, this can be a step towards innovation, in terms of food, I don't see anything wrong with traditional foods being made and presented in a different way, as long as it was done with utmost respect and with good intentions.

    Awesome collaboration. In the US, Filipino foods are getting more recognized now. Mostly in New York, Los Angeles and San Francisco area. In fact, some of them are top restaurants in New York, LA as well as nationally. I believe that it’s just a matter of time before Filipino foods becomes as popular fare as other South East Asian countries. 👍🏼❤️

    I like what they are showing the diversity of Filipino Cuisine and the idea that Filipino cuisine be presented Internationally, but I like itmore to presented in Traditional in Presentation. That itself is also part of Culture.

    When I was involved in a research project on indigenous knowledge, it became my understanding that no one could tell an indigenous people's (IP) story/history but the people themselves. But hearing this conversation with the in-depth observations from you and Erwan has made me realize that I was mistaken, and that the outsider's point of view is also rich with insights that an insider may find too mundane. This was a beautiful conversation about food.

    In the US, it took a very long time for Filipino food to become mainstream. Personally I think Anthony Bourdain's No Reservations feature of the Philippines really opened it up, followed by Andrew Zimmern and other features from the Food Network channel later on. Travel and Leisure magazine also rated the beach resorts in Cebu and Palawan top 10 destination in the world which brought more exposure to the country in general. Lastly travel vlogs from many foreigners vacationing in the Philippines have spiked content about the Philippines globally. Erwan's content was well presented very pro and I love Jessica's vlogs, she has that young energy and vibe plus the fact that she is Korean who grew up partially in the Philippines has been particularly interesting an quite refreshing. Keep up the awesome work we love it!

    Great choice of name "HAPAG" like hapag kainan (mesa or table) or hapag lutuan (kusina or kitchen) great food made chef' y, our food ingredients are eaten all over the world they just didn't know it, we're one of the main sources of the ancient spice trade, chili & pepper didn't grow in India or Korea naturally these are arid land or cold for Korea, the Chinese, Indian & the Arabs are the main collectors of this ingredients then spread and traded it all over the known world then, It's the reason as well why the European invaded southeast Asia then this ingredients spread out further through the Portuguese, Spanish, Dutch & the English so most of the ingredients loved all over the world are not native to their country they just think it is, the most potent once are located near the equatorial area not near the north, south pole or the desert, I would say Asian food can't be beaten ever you'll just end up eating what's already yours ignorantly FYI. these Spice Trade caused a lot of death & destruction in the past from the European but that's another story 😁👍👌😎✌.

    I am a big fond of FEATR bec Erwan knows how to dig up a lot of long lost or obscure filipino dish. We actually have a very diverse cuisine but people only knew sisig, sinigang, adobo and the tomato based stews like menudo afritada etc etc. But there are a lot of indigenous dish like in the province of cordillera, they have pinikpikan and diningdeng which is free of any colonial influence. Also the cusine of the mindanao which is very related to indian/arab cuisine. There is this stuffed turkey he featured pavo embuchado which I'm surprised bec my aunt knows how to make it and not everybody knows that dish. Also there's soup with burnt coconut husk he featured too which originates in the southern part of the archipelago.

    Daaang. Some of the foods here are done by Molecular Gastronomy methods. Molecular Gastronomy is a masterpiece talaga. As a culinary arts major, this brings me so much joy and excitement, these are like a peek at the path I chose. haha! So much for me to learn and explore about food. More food vlogs to comeee!! 🤤❤

    Where I live in Vienna Austria, they have filipino-fusion kitchen. Also meaning they offer vegan sisig, vegan caldereta, etc.. If we take Europe for example, the focus is more on having a healthy and environmental-friendly lifestyle. Restaurants have to accommodate the cooking-styles to reach broad range of costumers.

    To be honest, I was born in the Philippines and am full blooded Filipino. However, ever since I moved to the states at a very young age (6 y/o), although I speak fluently and eat all Filipino food, I consider Jessica and some other foreigners more filipino than me because they know the culture and do their research about the country. Some foreigners have been to parts of the Philippines I've never been or heard of, and tried foods I've only heard about by other people. To them, I give much respect for not only trying BUT also taking time to research and learn about the culture.

    so refreshing to watch jessica getting amazed, with the brilliance and eloquence of erwan cant help looking at jessica's reaction every single time...hahahahahaha i would love to tease them but unfortunately its far fetch, erwan is like an oppa, stoic and brilliant and jessica is the shy and curios yeodongsaeng ( i have to google it )...but i would love to see both doing more collab and take us to wherever
