Get out of the room about 7, have an easy breakfast in the MDR and walk on off with little lines. The cruise ship will usually give you any tag you want if you need to change your time. Yep, you don't have to be the first one off if you don't want to be. In fact, something I forgot to mention is if you have assisted disembarkation, you can request a later or earlier time than what they assigned you. You just need to be off by the time they are getting the last group off.

We’ve done it both ways it depends what the plan is for the day
Same here. If I have a lot of luggage with me and don't need to get off quickly, then I do opt for assisted disembarkation.
If I choose self disembark myself, can I leave the ship anytime I want?

Depends on flights. Earlier flights I do self debarkation. Later flights I will leave my bags out the night before
