How to Cook Miami's Legendary Cuban Burger with George Motz | Burger Scholar Sessions

  • Burger Scholar George Motz says that if you're ever in Miami, you owe it to yourself to visit Little Havana-a neighborhood known for its iconic regional burger, the Cuban Frita. Served on a Cuban roll and topped with crispy potato sticks, the burger patty is seasoned with Chorizo spices and doused in a secret red sauce. The Cuban Frita is a culinary survivor of the exodus following the Cuban Revolution, and remains one of the great Cuban-American gastronomic expressions. Here is your master class on the Cuban Frita.

      Yes and no. If it’s a bad burger and you’re just trying to get through the bbq then yes. If using beautiful flavorful meat for the pattie then no. Maybe a little cheese of your choice and that’s it.

    Cuban frita is a good borger, but a quick correction on the history lesson:
    The loss of supplies used to make much of cuban cooking was not caused by the communist regime siezing control, but rather america's decision to embargo the nation, cutting it off from many of the american ingredients it used in its cooking.
    This was such a major impact on the very rich french inspired cooking of cuba, that Nitza Villapol, a second generation cuban immigrant who found success returning to cuba and running a cooking show on cuban television, rewrote a large portion of her cookbook, Cocina Al Minuto to be able to be cooked without ingredients that were no longer available after the embargo, such as ketchup. This book is THE center of most cuban cuisine, and its editions from before and after the embargo give a solid view into just how wide of a pool of ingredients america starved Cuba of in response to the revolution.

      Wouldn't that imply then that their cooking wasn't inherently theirs? If Mexico, Peru, China or whatever other country were cut off from importing nothing would happen to their cuisine since they grow everything they need themselves. Why would that not also be the case for Cuba?

    • @CharlieRaspin
      @CharlieRaspin 4 ปีที่แล้ว +12

      @@aR0ttenBANANA That's not how cuisine works, so... no. English Breakfast Tea is a blend of Sri-Lankan, Indian, and Kenyan black teas; that doesn't mean it's not "really" English. I could go on, but I don't know where I'd stop.

    They call me Cuban beef,
    I'm king of all the meats
    When I'm on the barbecue I start
    S-Sizzl-ing S-Sizzl-ing
    Yes sir I'm Cuban beef
    People praise me of my
    rarest meat, When I'm
    fully cooked, people go
    Yum Yummy yum, yum yummy yum
    The restaurants they mass
    produce and get it from (agricultores)
    For a good price, fresh not on ice
    And when you eat that juicy
    burger it'll explode with so much (sabor)
    Singing about it, all the day long
    So if you like to cheat,
    take a lesson from an athlete
    So your heart doesn't go
    tick-ticka-boom, tick-ticka-boom
    tick-ticka-boom

    Many years of trade embargoes against the people of Cuba. The communist rule is the reason for the embargoes, but not the reason for the lack of goods in the country. Imperialism is.

    • @joaquinbanuelos6046
      @joaquinbanuelos6046 4 ปีที่แล้ว +1

      Refusing to trade with someone really isn't imperialism. Pre-Castro, the United States really damaged Cubas economy by turning them into a mono-agricultural producer, but that was 80 years ago. By now, it's sort of ironic that they'd need goods from the United States to thrive since the U.S. is their primary antagonist.

    • @apieceofenergy
      @apieceofenergy 4 ปีที่แล้ว

      @@joaquinbanuelos6046 no, but the U.S. imperialism through history is the primary factor leading to global superpower status, which allowed the embargoes to begin with. When they no longer had something resembling claws in Cuba they shut them off.

    • @joaquinbanuelos6046
      @joaquinbanuelos6046 4 ปีที่แล้ว +2

      apieceofenergy The Cuban regime called the United States their enemy from Day One. You can't do that and then expect to create favorable trade relations... I don't even understand why a proud nationalist, communist state would want to trade with the United States since most of their rhetoric is about the U.S. being evil.

      Go to Miami and ask any Cuban American if we should lift the embargo. They are an important political group and they absolutely do not want the embargo lifted. Weird how a bunch of exiles from the Cuban government hate the Cuban government. Maybe the embargo will be lifted once they pay back all the damage they did to their own country.

    • @STdoubleDs

      Communism is a basket case ideology. You say it's the embargo that sets Cuba back. But in reality, it's their own inability as communists to produce that is their downfall.
      Kind of typical for a socialist to demand handouts from successful nations when their systems have completely failed them.
