burger joint idea: the seating is like a sushi bar but having a long flat top for cooking burgers, your chef (graduated from George Motz burger academy) offers you a wide range of regional burger selections where they would cook it in front of you while going through the history and the trivia related to that burger, just like what he's doing here.
It's interesting how different people get different things in life. Since I live in Hungary , I will probably never taste any of these american burgers. But at the same time you will probably never taste authentic Hungarian cuisine. Now, the question is who got luckier. I feel it's you

Matt’s Bar is a small place. You can’t fit too many people in there. If you go at the wrong time, you will wait in line. The menu is simple, but for good reason. They NAIL the Jucy Lucy (proper spelling...sorry 5-8 Club 🤷🏼♀️). If you sit at end of the bar, you can actually watch your food being cooked. Having worked at a burger joint myself, I was in awe of the grill cook. He had an entire flattop full of patties and onions and everything else going on, and while he was sweating because of the heat, he made everything LOOK graceful and easy. You leave smelling a little like onion and burger grease, but it’s so worth it. The food and the experience add up to a great time. Their main competition is the 5-8 Club, who stuff the burger with so much cheese that it’s almost overwhelming. But sometimes less is more. I live in neighboring WI, and I head to Matt’s Bar every time I’m in Minneapolis!

Minnesota resident here. You *do not* require a patty press for a juicy lucy. But, I'm glad you highlighted the correct way to make one. TOO MANY places that sell juicy lucy's (even here) make a thick ball that explodes, causing all the cheese to leak out off of the burger. The realist juicy lucy you can get is at the 5-8 club. It is always done perfect there.
As a citizen St. Louis Carl's is damn good. The root beer there is off the hook as well. Another hidden gem of a burger place in St. Louis is Busloop Burgers. Highly recommend.
I'm from Minnesota and I live in Scotland now. Just this week I found out that Scotland has its own version of the jucy lucy called the "cheeze n burger." Like the jucy lucy, it is two thin patties with cheese in between, but unlike the jucy lucy, it is then dipped in batter and deep fried. The bun is optional, but I like it on a traditional Scottish morning roll. I hate how much I like it.

Part of what made Matt's Juicy Lucy taste amazing to me was standing in a line out in the cold, finally getting inside only to be accosted by the smell and heat of the grill for another 15-20 minutes before you get to order. So after 30 minutes of smelling this thing it's like the burger gods answering your prayers. Maybe it was just really busy that day, but it made the burger better. Matt's for the pub burger, 5/8 club for a diner version and Blue Door Pub for the best dressed Lucy's in town.
Another fun fact about the Jucy Lucy- They had their original sign finally come for the business back in the day and they misspelled Juicy, and if you are from MN or know about the feud between who created it first them or the 5-8 club, you’ll notice the 5-8 spells it “juicy” So Matt’s has a slogan that says if it’s spelled correctly, you’re eating the wrong burger Great history there, and yes as a fellow Minnesotan people do get in heated arguments over who made it first 😂😂😂 if you’re ever in Minneapolis, head down Cedar and stop in at Matt’s it’s a great spot

You guys should try an Ohio legend some time. Swenson's Galleyboy. If you're not familiar with Swensons, it's a drive in sort of in the same vein as In n out. Swenson's has been an Akron mainstay since the 40's and recently, they'd been branching out up to Cleveland and down to Columbus. All Swenson's burger patties are loaded with brown sugar and Worcestershire sauce on buttered grilled brioche style buns. I use brioche myself when I grill mock ups of these babies. The Galleyboy is different in that it utilises two different sauces: The top sauce is a tartar style sauce, while the bottom sauce is a barbecue style sauce.

Having lived in Minnesota for over half my life (20+ years), while originally having been born and raised in O'side and San Clemente, CA, and over half of that in Minnesota time having been in the Twin Cities--I have to agree with Babish. I've done a lot of traveling throughout the US and aboard and still the best burger I've ever had was a Juicy Lucy, BUT not at Matt's Bar, instead at the Red Cow in Minneapolis. I don't know if they still have it on the menu, but they had a bleu cheese bacon burger Juicy Lucy that was just friggin' divine. Never since have I had a better burger than that one.

You guys should try an Ohio legend some time. Swenson's Galleyboy. If you're not familiar with Swensons, it's a drive in sort of in the same vein as In n out. Swenson's has been an Akron mainstay since the 40's and recently, they'd been branching out up to Cleveland and down to Columbus. All Swenson's burger patties are loaded with brown sugar and Worcestershire sauce on buttered grilled brioche style buns. I use brioche myself when I grill mock ups of these babies. The Galleyboy is different in that it utilises two different sauces: The top sauce is a tartar style sauce, while the bottom sauce is a barbecue style sauce.
Just went to Matt's Bar in Minneapolis last week for an original Juicy Lucy!
Dude 5/9 club is where it's at! Admittedly I've only been there but they have cool atmosphere and the burger is top notch!

There's a place in Tempe, AZ called The Chuckbox who does a neat variant of that Jucy Lucy with grilled green chiles that they call a Tijuana Torpedo. A great regional variation on an already regional burger

Having lived in Minnesota for over half my life (20+ years), while originally having been born and raised in O'side and San Clemente, CA, and over half of that in Minnesota time having been in the Twin Cities--I have to agree with Babish. I've done a lot of traveling throughout the US and aboard and still the best burger I've ever had was a Juicy Lucy, BUT not at Matt's Bar, instead at the Red Cow in Minneapolis. I don't know if they still have it on the menu, but they had a bleu cheese bacon burger Juicy Lucy that was just friggin' divine. Never since have I had a better burger than that one.
