if you're interested, there's a great mini docu done by the channel "life where I'm from" where he follows a guy who runs a hole-in-the-wall style ramen show in Tokyo. It's so much work! Very eye opening too. But it makes more sense. It's a ton of prep ahead and overnight stuff to make, but the final assembly isn't long. Uncle Roger is right (of course) that Ramen is definitely not a dish really worth making at home. It's a true restaurant dish.

It's complex but scales pretty well. Making fifty litres of broth doesn't take that much more time than making a litre, same with basically all the ingredients. Also helps to have the equipment for it. Some dishes don't scale as well, like when you're looking at those Michelin star dishes with fancy plating, all those little pieces cost the same amount of time for someone to put them on each plate, and there's a lot of them.

Sorry for second comment but yeah. French cooking is all about building flavour and colour. Many ppl who are educated in French style cooking are looking for that developed rich dark colour but obviously that doesn't apply to other cultural cuisine! It is amazing to achieve that creamy white opaque clean colour of the tonkotsu broth!
As a Japanese person I can say it’s true, I made that mistake of not draining the water and my grandparents gave me a lecture of traditional Ramen cooking 😅

Im Austrian. My grandmother taught me to cook her souprecepies. Porkstock, chickenstock and beefstock. She taught me the same thing Roger mentions about cleaning the the bones. Cook first in clean water, drain and cook finish in new clean water. It's always a clear soup. Mmmmmmm😋👌

@@borismuller86 maybe he's like me, obligatory foreign language class credit for at least 3 semester during grad school. I took japanese and the japanese lecturer even told me the syllabus is at kindergarden level. They teach advanced level if you really enroll in the class.
