It means that there’s no specific menu and that you’re leaving it up to the sushi chef to serve you what he thinks is best. In fact, omakase literally means “I leave it up to you” in Japanese. If you don’t want to do that just order want you want off the menu.

If you’re going to make a video on the topic as someone with knowledge of it then you need to study the correct way to say it. The last syllable has a short /e/ sound/-not long! So it is not “see!” It made me cringe. You’re also putting a /sh/ sound on the first syllable of “su” in sushi. So I almost immediately had to stop watching your video.
