I kinda wanna knit all of these right now, they're so so cute!! Thanks for putting all of these together. I haven't tried many scrappy projects yet, but one that is high up on my list is the Stripey Turtle Tank by Emily Curtis / Gently Chaotic Knits. It's a tank top and not sock pattern, but I believe it's perfect for using up (larger) scraps of fingering weight / sock yarn.

It's so addictive! Some people use 4 double pointed needles, but I've gotten used to using a 9 inch circular needle. They are a bit fiddly to begin with, but learning anything new takes some time :)
