To help burny splatters on your hands - just wear dishwashing gloves. They’re a little thicker than traditional latex gloves and I find I can handle the jars/boiling water/boiling mixture without any harm!
That juicer is incredible. I need me one of those. Have you ever thought of getting a water bath steamer? It’s way better than water bath canning. It’s called a fruit steamer, you get it from Amazon and you never have to fill a giant pot of water to water bath jam or anything else as long as you live. I will never ever water bath can again for the rest of my natural born life. Game changer. You guys need two. Trust me, even though I’m a stranger.😊

No, not too full, just follow what the recipe says! I did mine a little lower for soups they often say a "generous inch", so I do inch and a half on the soups because of the high fat in the meat. The National Center for Home Food Preservation says this is OK to do.
I just quarter my apples, and cook them, and then run them through the Victorio strainer. It takes out the seeds and any other hard parts, and then you can use all the apple around the core. Much faster too, than running it through the apple corer/slicer/peeler.
I love that you use the whole apple! I've always worried about the seeds clogging it up. That happened to me with the grapes before I bought the special grape spiral. Once I got that I had no problems. Do the apple seeds go through easily?

To use your induction stove you could possibly use a disc of about 1/8” thick sheet steel cut to the diameter of the bottom of your aluminum pressure to place underneath it. You can also use scraps of the same thickness sheet steel laid out underneath it, this can make it easier to handle and more economical. Be sure to debut the steel.
I love my steam juicer! I just finished my grapes a couple weeks ago. I also use it for peaches, pears, plums, currants and apples. So,times I like to mix two fruits like apples and grapes. I use a stool to hold my jars. We will mix it with sprite or sparkling water for a fun “punch” during the holidays.

Your steam juicer can also be a game changer for making applesauce. Wash your apples, remove any stems, quarter, remove any bad spots, don't peel or core. Just fill your steamer basket all the way upand put the lid on. crank up the heat. As soon an the apples start to soften, just before the juice starts to run, turn off the heat. I like to let it cool for a little while before putting it through my Sqieezo Strainer, which is much like the strainer you used on your grapes. I usually put the apple pulp through twice. Some people let the juice run out before they strain, but I find it robs the sauce of flavor. I usually can in pints now that the kids are all grown. Then waterbath for 15 min. I hope you find this an easier way.
I grew those cowpeas this year and I got SOOOO MANY! I am tired of shucking them lol. But they are great to have on hand, and I’m very happy I grew them.

I was thinking I had enough applesauce preserved, but I realized, I made it flavored by adding strawberries and blueberries to it. I don't have many plain. I'm thinking I should go to the orchard this weekend after all and get some just for that.

You can skip the coring. my whole family just cuts and cooks them down. I always add three or four different kinds of apples. very yummy, i've never added sugar. I have the same processor you do. it works wonderful. but maybe you can cook more at the same time.
That steamer pot really does look handy. We don't do juices yet, but when we do this will have to be on the list. I think I need the food mill first. Pressing tomatoes through a strainer for sauce is really annoying. Everything looks so good. I might have to try some of these. So far, I have been an ingredient canner, so just chicken or just stew meat. I can mix in a couple of jars to get a meal and not worry about the vegetables being over processed with the meat. We got some pizzazz apples one year and they made an amazing applesauce. Highly recommend the variety.
You might be able to use aluminium pots on the induction stovetop if you put a copper or steel plate under the top. Then the plate will heat up and transfer the heat, it's not the most efficient method, but it should work
I wear standard vinyl cleaning gloves to avoid getting shot with hot foot when canning. Works well and easy to replace if they get a hole. I have also used very thin fingerless gloves bc it tends to splatter on my wrist area not fingers.
I did the same thing this year with ready made foods. When you can chili, or soups with a higher fat content, how much headspace are you leaving. I just did a batch of chili, and only 2 jars sealed for me. I assume it was the fat, and not enough headspace. I followed the NCHFP website, but that was very disheartening. Thanks!
Interesting to see you add only a quarter of the sugar content that the recipe suggests - it would be nice to see the 'professional' cooks/chefs do the same. I've been using a quarter (or less sometimes) of sugar in all (but one) of the recipes I use and it tastes so much better.
Now that you’ve grown all of your food for two years, would you have a rough estimate of how many square feet per crop you need to grow for a family of four or per person? We eat the same way your family does.

I have to say great job on all that canning! I tried pressure canning (pumpkin) about a month ago and it was a big fail 🙃 I don't think I blanched it correctly, because it became mushy and then there was a pumpkin color to the canning water so it somehow leaked from the jars. The water level seemed low in all the jars afterward. I also pinched a jar lifting it out and air started escaping which scared me. I ended up feeding it all to the chickens. I could have freezed it but after processing it for 90 min it didn't even resemble the beautiful pumpkin I started with (a candy roaster squash) and since I still have a few I grew I decided to just use it fresh. But holy cow, the time it takes for all that, prepping jars, peeling squash, monitoring the canner to make sure it stays at the correct lbs and most of all destroying my kitchen 😂 I am going to seriously contemplate whether or not I need to can or freeze my produce.
You should get an electric pressure canner; that way you can just plug it in and won't have to worry about stove space. Only downside is you can't water bath quarts in it.

Put marbles in the bottom of the juicer to make noise. Then you will know if the water runs out and you don't burn up your pan.

Just did 24 gallons of grape juice last week with two steam juicers.....took more than two days, with waterbath canning

I tried pressure canning (pumpkin) about a month ago and it was a big fail 🙃 I don't think I blanched it correctly, because it became mushy and then there was a pumpkin color to the canning water so it somehow leaked from the jars. The water level seemed low in all the jars afterward. I also pinched a jar lifting it out and air started escaping which scared me. I ended up feeding it all to the chickens. I could have freezed it but after processing it for 90 min it didn't even resemble the beautiful pumpkin I started with (a candy roaster squash) and since I still have a few I grew I decided to just use it fresh. But holy cow, the time it takes for all that, prepping jars, peeling squash, monitoring the canner to make sure it stays at the correct lbs and most of all destroying my kitchen 😂 I am going to seriously contemplate whether or not I need to can or freeze my produce.

The recipe seems like a Brazilian beans recipe that we call feijoada. Its delicious
You should get an electric pressure canner; that way you can just plug it in and won't have to worry about stove space. Only downside is you can't water bath quarts in it.
I wish I could find more vegetarian ready to eat soup recipes to can. I’ve only found two!
