Home Canned Copycat “Rotel" ~ Canning Tomatoes and Chilies

    Here's my copycat version of Rotel using safe canning guidelines.
    3 lbs. plum tomatoes, cored
    3/4 lb. jalapeno peppers or other chilies
    4 cloves garlic
    2 t. salt
    1/4 c. chopped fresh cilantro
    1 1/2 t. citric acid
    1/4 t. each smoked paprika, coriander, cumin
    1/2 t. Mexican oregano
    Ladle hot tomato mixture into a hot pint or half pint jar leaving 1/2” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 20 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    very well done. thanks for explanation on the citric acid swap. did not know this fact, and it's knowledge to use in future. excited for this one and will make one batch for testing, then if family likes I will 4x it then can it up!

      Your comment is 2 years old and I see you didn’t get any idea…..a really good nacho cheese dip, 1 block velveeta, 1 block cream cheese, at least 2 cans rotel and a little milk to desired consistency, it makes a big crockpot and is delicious!
      I also put rotel in chili, beefy type hot dish’s, taco meat……you will put it in everything when you have it on your shelf !!!

    For some reason i didnt think to roast my peppers and tomatoes when i did “rotel” last year.. although mine was just tomatoes with very few Anaheim peppers, salt, and then lemon juice in each jar so really isnt rotel per say, but more or less tomatoes with chiles lol.
    I also had quite a bit of juice left over, so i canned that and use it in chili!

    Ive been water bath canning salsa and “Rotel” with onions, Bell instead of Hatch Chiles and jalapeño peppers and for a number of years. I use lime juice. I have never had any issues and I use my own canned Rotel quite often in my cooking. Never heard there was an issue before now. 🤔. I also can tomatillos which they say is not safe. No issues there either.

    Hi Carol! Always enjoy your videos. Your advise is always well thought out and spot on. I was wondering where you find your Mexican oregano? I have been looking for it for awhile, but unable to find any. The Mexican store carries the packets of spice, but the are not sure it the packet is Mexican oregano. Thanks!

    Thank you for all your time & research for this recipe! QUESTION: is there a reason that this couldn’t be pressured canned, so that you don’t have to work around the acidity so carefully? I’m fairly new to canning & feel pressure canning is safer.

      Tomatoes are safe for water bath or pressure canning and have to be acidified either way 😊 ohioline.osu.edu/factsheet/HYG-5336

    Thank you so much for sharing!! I can't wait to try this recipe. I do have two questions.. sorry, lol. My first is... has anyone ever used acidity strips in new recipes to check the acidity? My second is... could you pressure can a recipe if you were not sure the acidity to be safe? Thank you in advance from a new canner. Hugs!

      Hi! The experts don’t recommend testing acidity at home. I know some do but it’s not something I can recommend. It’s best to stick with what’s been tested. In some cases you can PC but it doesn’t always make sense for quality reasons, salsas for example would not PC well. Also in order to know what processing time is appropriate you would have to start with what’s been tested. Hope that helps 😊

    Love this recipe and watching your videos! I was wondering if it was safe to use type of tomato besides plum. I had some canning tomatoes left over from a canning recipe and wondering if I could use those instead of the plum tomatoes. Also, since they are already peeled, could I still roast them along with the peppers and garlic? Thank you in advance! I am new at canning with tomatoes!

    hi Carol, great video...I think it's good to note that you are not making the original Rotel (tomato/chili only) but rather the "Mexican Style" Rotel with Lime and Cilantro...two different products...that said I was looking thru my Ball canning book for just this type of recipe. Quick question, may I sub out the tomatoes or must I use Plum tomato only? Generally I like to use a mix of cherry, Legion, San Marzano, Cherokee basically whatever is in my garden at the time (for my sauces) I'm assuming as long as the weights are the same that it is ok to swap. Finally do I really need to roast them? I understand the flavor profile that creates but from a canning safety perspective is this required? many thanks for your thoughts

    You could substitute some Nadapenos for some of the hot jalapenos to cut some of the heat and still have the jalapeno flavor.

      You can substitute any pepper as long as you use the same amount or less.

    Is it necessary to char the tomatoes. I have a lot of tomatoes from my garden that I have frozen in my freezer and don’t think they would roast after thawing. I’m sure it would taste better to roast them but that wouldn’t be possible in my case. Ty for your advise.

    Should I heat some extra tomato juice to bring the liquid level to the ½" headspace mark? Roma tomatoes are nice and 'meaty' but have little juice

    Is this about the ĥeat of original? Is there a good way to adjust for mild or hot?

      Yes it is. You can swap in any pepper you’d like to match the heat level you prefer. Just don’t change the amounts.

    Getting back into canning (just did a handful of salsa this week, all done with citric acid and a water bath.) Is there a reason I can't do this with a hot canning (i.e. - pressure cooker) method? Most folks don't do pressure on a tomato product, just increase the acid, but curious.

    Use litmus strips to test acidity. I believe it needs to be 3.5 to be safe. See USDA safety guidelines.

    So if you want to leave the onions in and you don’t want to water bath would it be OK to do this recipe and then pressure can?

      You can certainly leave the onions in and water bath can but they do not give processing times for pressure canning.

    Carol did you heat your jars up in the steamer. I have the same pot and I’m a little confused when it comes to the steam canning.

      It doesn’t matter how you heat them as long as they are hot but you can hear them in your canner

    I made this yesterday and only got 3-1/2 pint jars. Do you think it will be shelf stable? You stressed the amounts of things being very important.

      Since the safety of this recipe relies on the citric acid I wouldn’t use it.

    I bought litmus test kit. It tells you exactly how acidic your recipe is. To safely water bath can tomatoes and tomato based recipes your acid level must be below 4.6. I add acid until my recipe is no higher than 4.3.

    I don't think Rotel has cumin in it.
