I love Biscoff cookies, so I will try this recipe soon. They're really an everyday version of speculass, a traditional Christmas cookie that's made in Belgium, Holland, and Germany each year. They're like "spiced shortbread." My grandmother was Dutch, so I'm very familiar with speculass cookies and I have ate tons of them. 😊 One of her secrets was to mix the dough and then pop it into the refrigerator for 24 hours. It allowed the spices to bloom and for the flavors meld together. It made a better cookie, she claimed, but who can wait that long? 😅
I love Biscoff cookies so much! We can buy Biscoff cookie butter here in the States, as well. I like to spread the butter between 2 cookies. I am sure that your homemade version are even better than store-bought. I hate rolling out dough because I am no good at it, but I may try these!
The original name of this biscuit was speculoos (belgian and dutch people will still call them this). There is also speculaas, which has a little more spice and I think is even more delicious.

And not to be picky here but Speculoos is actually the orignal name, because it was hard to pronounce they exported it under the name "biscoof" (for Biscuit - coofee). The spread is just called "Speculoos spred". It's a famous threat to offer to children for Saint Nicolas (6th of décembre). Anyway, it's all coming from love because I love you and your Channel for years. So happy to see Belgian cooking here

Almond flour should work. Just use the same amount of almond flour as the recipe says for all-purpose flour. If the dough is too sticky, add a little more almond flour.

Hi. Allspice is NOT a mixture of different spices. It’s a SINGLE spice all of its own. A round small brown pea-sized thing that can be ground. As a substitution for each teaspoon of allspice, you can use 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and a pinch of ground nutmeg. Hope this helps.
I love love lotus biscoff. Can the dough made work as drop cookies or dough shaped into a log and then sliced to biscoffs thickness ? I hope to hear soon as I’d like to use as my holiday cookies, but will need to do a trial :)
In the original Lotus cookies there is only one spice - cinnamon. What you are making are rather Belgian speculoos cookies. :) Lotus Biscoff cookies ingredients: wheat flour, sugar, vegetable oils (palm*, rapeseed), caramelized sugar syrup, raising agent (sodium bicarbonate), soy flour, salt, cinnamon. 🙂 Nice recipe anyway.

Just one question, can you confirm that the ground allspice you use in this recipe is actually made from ground allspice berries? Or is this British mixed spice blend that includes cinnamon, ginger, cloves etc, often used at Christmas? x
You can try margarine or coconut butter in place of butter. Note that the flavor profile will be slightly different with the latter as it has a distinct flavor. Hope this helps.
Could you please do a video on homemade Maryland cookies ? I can’t do soft cookies… 😩 just feels like biscuits left out on the counter for too long to me😢 So a good crispy chocolate chip cookie ( with nuts) like Maryland would be great to make 😊😊😊 I have tried several recipes . But they either get soft in the middle or just very thin and hard , not thick and crispy 😢

Please do better reseach. Biscoff or speculoos are made with just cinnamon and vanilla. Biscoff/ Speculoos get the flavour from carmalizing and not the addition of spices. It is different from speculaas which is more of gingerbread flavour and eaten i the Netherlands. It has more spices and is not carmalized like biscoff cookies.

My son has dairy/egg/nut allergies and store bought biscoff is safe for him. What can we sub for the butter to get similar results?
