I love the education you both bring to us ! And seeing the kids join in is so wonderful ! We also helped and enjoyed it , they made us a sausage grinder on a bicycle pedal somehow and we fought over who got to pedal !! Not realizing we were actually working grinding sausage !! Lol. Im going to reveal a country family secret. This is so good, you can take canned green beans. And its still great. But if you can get fresh greens, the better. Your going to take Salt Fat Back, and add it to a about 2 cups of water, let it boil for about 10 mins, then add green beans, let that semi- boil for about 15 mins. Then cut down to simmer for a hour...Now, you got best green beans you ever eatin. !! Add salt if fat back isnt salt enough.
My grandparents always soaked their salt cured, smoked hams in water, prior to cooking. They would switch out the water several times to take the excess salt off the meat.
Yep!!! That's how my grandma taught up to do to. All ways soak your salted meat the night before, and change your water few times during your soaking. She would tell us. Lord how I miss that woman.

Boiled backbone all it needs is salt and a few pod of dried cayenne peppers some good crispy cornbread cold glass of milk I am very happy. Yalls videos are good just found it a few months back

It’s so satisfying to raise and preserve your own food, or food purchased from local fellow farmers. I just purchased a lot of chicken from a local farm in case farms (small & large) are forced to cull flocks.
In New Zealand we would call those pork bones. Chuck in a pot, gently boil them for a couple of hours, add some potatoes and greens (watercress) , dough boy's ( dumplings) and your done.
If you dont mind looking at them, a couple pieces of patty paper works really well to use as a cheap boneguard, to prevent the bones from popping through the bags
We would make a “meat painter” out of clean thin rags, made a ball out of them and just tied it off where it wouldn’t fall apart. You can brush over that meat a lot quicker and get that smoker or grill shut off quicker.

Megan take that cutting board from Andy and use that in front of your sealer so you do not have to keep picking the pack up to seal it. Also I use the pork loin to make my cubed pork steak and it is so good. Very nice looking pork yall have.

Megan , suggestion , buy you a cheese knife , handles on both ends , approximately 12-14" to cut the pork fat . It is very safe , the job would be quicker , take care , enjoy .
After I season and smoke my pork butts for 6-7 hours then I wrap them tightly with aluminum foil and continue to cook them on low temp for another 8-10 hours. They are always juicy and moist. I just did a spiral ham like this and it was delicious.
Megan, What type of Vacuum Sealer do you use, and do you Like it? Great job on the Pork shoulder! It DOES look VERY Good! Your freezer must be bursting! What problem to have!!

My Mom used to do the lard rendering in a HUGE roaster in the oven on a low temperature.

I have silicone whisks and brush. I love them. So easy to clean.
I remember hog killing time in the 60's at the home place in Hackleburg, Al . Helped my granddad start the fire at 4am.

Wash your knife ever so often with hot soapy water. Dry well with a towel. Go back to cutting your meat. It will help the knife cut better.
