    Yes, I will do it this week. Not sure what I like more, ginger or brandy, but I typically keep some form of home infused booze in the back corner of the rerfrigerator. I keep it in an antique quart size brown and white crock. One of my best mixes a 5th of brandy or bourbon of your choice with a pint of good quality maple syrup, which fills out a quart bottle and will warm your cockles on a winter day. I have also been known to abuse cherries by drowning them in rum. This of course requires a larger mouth bottle or pickle jar.

    I have a ginger crackle cookie recipe that has powdered, fresh and candied ginger in the ingredients. I do not intend to buy crystallized ginger ever again when I can make my own! Thank you.

    I would add the Grated Lemon Peel, Honey etc...
    It makes a Great Hot Tottie.
    Best Cough Syrup that I have used and Shared with others.
    Great Job with Video.
    I like to make Tinctures and seeing your Video, gives the insight to add CBD&THC.

    Can just use the backside of your knife, to peel ginger. Normally flattened unlike some spoons. Then less dishes.

    Thank you for this. I wish for you and yours a very safe and happy holiday season. Grateful to you for the showing of the way to use the brandy for other than eggnog. I do so love the practically no waste policy, as well. I love ginger and have made candied ginger in the past but it sweated, apparently, I will need to have a pot of water simmering while the ginger is drying. There's a mystery solved. Appreciate you.

      The leftover sugar picks up a slight ginger taste so I use it for things like cinnamon toast and baked stuff that will get spices added anyway.

      @@TheMudbrooker I have used a vanilla pod in sugar to make vanilla sugar which is nice in tea. I can imagine ginger sugar would be awesome as well. I have been having a time with demerara sugar I wonder about that stuff but yummy. Really like the cinnamon toast with ginger sugar idea. Fun stuff. You are so appreciated.

      The air was too dry? I'll have to remember that. Now I have to wonder if it's ever possible for the air to be too humid for this.

      @@thethegreenmachine It's not so much the humidity as it is the heat in the dehydrator drawing the moisture to the surface.

    This is a wonderful video to run across, and I'm going to try it. I buy candied ginger when it turns up: candied ginger is an important part of a balanced diet which, as everybody knows, must contain elements from the four main food groups.
    The four food groups, unknown to the Department of Agriculture, are candied ginger, dried apricots, walnuts and brandy.

      I can tell you're looking for more things to do with all the wonderful leftover cooking liquids you're generating. I think if you've got $99 for that Wish alcohol still you can use your syrup, your ginger liquid, and maybe one or two other things, as the basis for some good likker...
      Anyway, I thoroughly enjoy your channel and your whole aesthetic. Great stuff!

      That's the bottom half of a Pyrex double boiler, I got it at Goodwill but they're fairly common on Ebay.
