    Meri family pichle 6 saal highest quality basmati rice kha rhi ha jiska rate market 90 Rs ha. Do we need to switch to brown rice? Bcz Mere mama ka sheller ha to hame kafi cheap padta ha basmati chawal. And quality bhi assured ha. Please reply

      Difficult to answer. So writing what we do.
      We use basmati rice for our daily consumption ( we consume at least one meal with rice) and brown rice for preparing khichadi of mixed grain or in salads once a while. Here, our suggestion -what we do -Enjoying every meal is more important than anything else.( Guilt free eating )

      You can use any brands/ or local. We normally get Shelly ( brand) in our surrounding - if that is not available we use loose rice too.

      Sella process is known as parboiled process and rice obtained from that method is known converted or parboiled rice. Rest other rice in this video are non-parboiled rice/ Atop /Arwa rice.

      1121 is not a code . It is an Indian variety developed by Pusa. To know more visit our video traditional rice and basmati 1121.
      Normally brown rice are sold with rice name. Like brown rice basmati or sona masuri etc.

    Ma'am Murmure banane ke liye Usna Rice use hota hai shayad. Usna rice Sella rice hua ya Brown rice? Maine kai video dekhe but confused ho gaya kyunki log bol to rahe hain parboiled rice but factories jo bana rahi hain unhe dekh ke lagta hai ki brown rice use ho raha hai? Ya aisa hai ki rice variety ke hisab se bhi Sella rice brown sa dikh sakta hai? 🤔

      Usna rice = sella rice = parboiled rice ( dhan ko halka boil karke sukha kar uska hull remove kia jata hain)
      Both has similar appearance due to pale yellow colour.
      Usna or sella is process in which any type of rice can be used. Murmure banane ke liye aksar mote dane wale chawal istemal me laye jate hain.
      Brown rice bhi ek process hain jisme paddy yani dhan ki just upri layer nikali jati hain aur inner brown rakhi jati hain jiske wajah se wo brown dikhta hain.

    Well explained... i think the fourth rice ..govind blog rice looks similar to the jeeraga rice or jeersa samba rice .. preferred in tamil type biriyani .. and like Ganda saale rice in coastal Karnataka.
    Indian rice varieties are a study subject .

      Yes, indeed both are small grains. But, taste and firmness of rice is totally different each other. Gobhind bhog is little bit of starchy too.

      Itne achche shabdo se tarif karne ke liye bahut bahut dhanywad.
      Kachcha Basmati = koi bhi Basmati ki variety jaise video mein hain 1121= sabhi kachche chawal se aata aadi bhi banaya ja sakta hain- bhaat banane ke sath sath = dhan se nikla hua chawal
      Pakka basmati =Sella basmati = Parboiled rice: Basmati = converted Rice: Basmati.
      sabhi pakke chawal ka istemal sirf bhaat ya chawal dishes jaise pulao ya biryani aadi banane ke hi kaam aata hain.

      basmati - pahle achche se dhone ke bad soak kariye 15-20 min kam se kam. Phir 1 part chawal 2 part chawal aksar hota hain. Magar kai bar chawal itna aged -naya aur purana hain uspar bhi pani ki quantity nirbhar karti hain. Vaise yadi chawal packet wala ho toh uspar bhi chawal pakane ka instruction likha hota hain.
      Sella Basmati - chawal ko dhone ke baad use 10-15 min pani me soak kare. Phir 1 part chawal 2 part pani dal kar pakaye.
      hame isi tarah se video me dikhaye basmati 1121 aur sella basmati 1121 pakate hain. Chawal to pani bahut der tak soak nahi karna hain otherwise chawal ka taste thora fluffy par kam tasty lagte hain.

      Part 1: Soaking of Rice ( Old Rice -good aged rice)
      Basmati = 20 min bhigona hain (hum iske jayada nahi bhigote hain).
      Sella basmati = 15 min ( Hum isse jayada nahi bhigote hain)
      Note for Soaking: What we do
      Jayada bhigone se chawal ka taste hame achcha nahi lagta, aur hame pake huya bhaat ( chawal) thora fluffy lagte hain. Yadi aapko do ghante bhige chawal achche lagte hain toh aap apni practice continue kar sakte hain.
      Har ghar ke apne tor tarike hote hain. Maine aapse jo information share kari joh hum follow karte hain.
      Part 2: Pressure Cooker - Method for both the rice
      1 part Chawal aur 2 part Pani - Sara pani chawal jazb kar (absorb) leta hain. Yani hum chawal ka pani fakte nahi hain. Yeh ratio pressure cooker yani bina starch nikale hee chawal banane ke liye hi hain. Yadi aap chawal ka starch fakte hain toh pani kitna bhi jayada le lijiye- waha toh koi dikaat he hee nahi.
      Part 3 :Rice cooked in Patila/bhagone (casserole)
      1 part chawal aur 2 1/3 part pani ( 2 + 1/3 part)
      Isme bhi pani pura chawal me jazb (absorb) kar lega. Pani thora jayada isliye hota hain kyuki patila air tight nahi hota aur is vidhi me thora water loss hota hain.
      Part 4: Note for New Rice
      Agar rice naya hota hain toh chawal main pani 10-12 % kam dalna hain.
      eg yadi aap 100 ml wala cup ke measurement ka chawal bana rahe hain toh pani 180 ml pani kafi hain
      Part 5: General Instruction
      chawal me pani ki matra aapke location yani mausam , chawal ke brand aadi par bhi nirbar karti hain, aapko apna combination khud hi set karna padega.
      Upar diye answer main hune aapne ghar main follow honi wali pratice batayi hain.

      Ponia ke basmati? Raw rice ke saath jayad chalane se rice toot jate hain.
      Basmati Sella ko Kachchi Biryani ke liye use karke dekhe
      aur pakki biryani ke liye Basmati rice.
      Yakhani Pulao ke liye bhi Basmati use kar sakte hain.
      Aur jab basmati ko soak kare toh 20-25 se jayada na bhigoye.

      Sella chawal ko galane me basmati se bahut jayada time nahi lagta. Yadi basmati ko banane me 16-20 mins lag rahe hain ( approx 2 to 3 cups) toh sella ko 21-24 min hi lagte hain. Approx. 15 to 20 % time hee jayada lagta hain.

    What is difference between steam rice and parboiled rice ?
    Only difference i know is former is arwa rice and later is usna rice ?
    But how they are different
    As both the process sound similar but their is substantial difference

      Arwa - without any process, raw rice , obtain from paddy with minor rubbing
      Usna - parboiled / converted or sella rice
      In western countries, sometimes they use term steam rice for parboiled rice.

      Let me share our experience about rice. ( 100 % our opinion)
      We eat all above rice including two foreign varieties - Arborio and Jasmine rice too based on the dishes we prepared. But, as we consume rice daily at least in one meal so we use Basmati 1121.
      Yes, a lot of health expert advise (mostly westerner not known any Indian) you not to consume hybrid varieties too. But, practically it is not possible because we don't know about that - 100 % it possible when we grow ourselves every item that we eat. Hybrid (kind of cross-pollination) is a kind of natural process of growth in the plant kingdom. Corn is developed naturally by a couple of grass varieties almost thousands of years ago.
      Eat local best thing we can do. Here for Delhi NCR, Basmati is also local which is just grown in a radius of 250 -300 km.
      Eat with comfort and confidence. Guilt free.
      Health also depends on the frame of mind and your thoughts too. Best food in the world will not give the best result if you eat without enjoying the food or eat food with a lot of fear.
      If you want to buy short-grain rice -if you have to visit the health store or else online.

      Thanks a really lot.
      You have given a new dimension to study the Rice, which is our ancient staple.
      From a little bit research I have got unsure idea..that the Basmati grown in Haryana and Punjab is Pusa Hybrid. Whereas Kohinoor brand is claiming that their Basmati is sourced from Himalayan foothills, which probably may be traditional desi variety.
      Not sure..just an idea...
      Also, according to internet search, Parmal Rice is also Pusa Hybrid.

      No. Brown rice kya hain wo toh video me bataya gaya hain. Unpolished rice -white rice ka pahla step hain- jisme pura hull niklane ke baad use aur machino dwaro chamaya nahi jata. Rice mills me chawalo ko ragad ragad ke saaf kar polish ( koi additional jeez nahi lagai jati) bas chawalo ko gheesa jata hain, jisme wo saaf aur chamakdaar ho jate hain.

      Aap jo bhi rice bachpan se kha rahe hain. Wo thik hain. luckily India is part of rice belt area. So hamare yahan ( Bharat me ) to har tarah ke rice hote hain. Wild rice or red rice bhi kafi achche hote hain.
      Vese hum batata rahe hain jo hum khate hain regularly-
      Family rice ( since childhood)- Basmati Rice 1121 (Vese jo log basmati nahi khate unhe steamed rice me basmati achcha nahi lagta hain: wo aksar complain karte hain unka stomach full nahi hua etc.). Basmati me low to medium GI hain toh log diabetic ke liye bhi achcha mante hain. Par har rice ke apne gun hote hain.
      pulao or fried rice ( often - fortnight or so) - Basmati sella 1121
      Kheer (any occasion or festival ) - Gobindbhog rice
      Salad or mixed kichadi - Sonamasuri Brown Rice ( weekly or fortnightly)

      Aapka sella kharab hoga/ ya ho gaya hoga. Sella banate waqt koi badoo nahi aati hain . Kai processing ke baad store theek se na kiya jaya toh chawal kharab ho jate hain. Ya fir bahut purane chawal ho jaya toh freshness chali jati hain aur badboo aati hain.

      Keeping price into the consideration Try any long grain non-basmati rice. Or use Parmal rice. Both are equally good.

      There are 3 steps to make parboiled rice. (We cant say how much time as it depends on quantity and type of paddy )
      Soaking of paddy
      Parboiling of wet paddy and drying them
      After drying, removing of hull
      In earlier days, it was made at home by villagers.

    Thank You for explaining about the difference in taste of the Sella. I bought 25 lbs of it when I couldn't get my usual Jasmine rice. However I did not enjoy the squeeky feel of the rice...and the taste certainly isn't like Jasmine. But I have 20 more lbs of it...so I am trying different ways to cook it ie) rice cooker vs stove top vs sautéed. I find it works well to steam it then add to sautéed spices and veggies or pilaf but I mostly use rice steamed with soy for which this does not work so well. Will I buy it again? Not if I can get Jasmine Rice in 25lb bags. Maybe I'll change my mind before I use the whole bag. LOL!

      Nuksaan kyu hoga. Rice toh is belt yani Indian subcontinent me paida hota hain . Yadi koi cheez us location pe paida ho rahi hain aur insan kha raha hain to nuksaan kyu hoga. Jo cheez aap ke mata pita aur unke mata pita aur bahut si pidhiya kha rahi hain - toh wo kyu dar se kha rahe hain aap.Sella Basmati aur basmati toh indian rice hi hain.
      Rice humare culture aur parampara ka hissa hain. Dar ko nikal dijiye.
      In fact, bharat se purvi ( japan, china, thailand, Indonesia etc. ) taraf sara rice belt hain aur log sadiyon se tarah tarah ke rice jo us location par ho rahe hain wo kha rahe hain.

      Milawat aur duplicate khane ka saman ek samaya hai. Useke liye hum sajag rah sakti hain.
      Khane ka saaman kisi reliable shop se kharide - yani jaha se kharid rahe hain aap hameshe se.
      Yadi kabhi aap ko kabhi shaq hota hain ( thoda dekhkar kachcha kha karkar jaise rice ko kachcha taste kar sakte hain) ki saman ki gun pahle jaise nahi hain to us saman ko dukandar ko wapas kare.
      Yadi aap kisi brand ka saman le lete hain toh packet ke peechche customer care number hota hain waha complaint kare.
      Duplicate saman ke liye thora sajag rahna padega.

      Thanks a lot.
      There are 29 varieties of Basmati (notified) that are cultivated in northern part of India. In which Punjab Basmati 2, 1121 (Pusa 1121), Basmati 386 and Pusa Basmati 1, are famous for their l extra long grains.
      India Gate and Kohinoor Basmati Rice have not specified anything on their packet, though they have mentioned about the region of basmati cultivation ( Terai Region of North West Himalaya). Since, they claim that their rice is extra long grain; we can assume that it is one of above mentioned variety of basmati rice.

      We will try .
      It is not common statement for every rice but it is true for Basmati. Sharing our view on this :
      Aging is required to eliminate moisture content from the rice grain. fresh rice or new rice add stickiness to the cooked rice, not considered ideal for North Indian way of rice preparation.
      Whereas certain type of rice and rice for making rice flour are needed to be fresh for more sweet flavour and sticky quality.

      If moisture evaporation is only reason of aging, then I saw a research papers of some studies which are showing that machine dried rice has better output as compare to natural aging, considering the facrors like nutritions..storing..time consumption..taste..etc.
      Other than cooking preparation..is there any more reason for aging and moisture evaporation?

      We are not 100% sure about purpose of aging as not read in some authentic book-esp for rice. But, as per our understanding aging surely does the following
      1) rice grain becomes dried - hence segregated grain when cooked
      2) Retain shapes - desired quality for Basmati and other rice used for biryani
      Yes for use of the rice. We also make rice flour also from fresh or new rice- good for certain rice dishes. Flour from aged rice makes such dishes bland.

      Aged rice are very flatulent because they are moisture evaporated rice, aged rice needs tempering process like heat up oil add jeera add soaked rice only not soaked water, saute rice in it till it translucent then add soaked water and pressure cook.

      Rice grain or paddy ke mote tor pe 4 part hote hain
      1) Hull or Husk - upri bhusa wali covering
      2) Bran layer - niche ka cover jo dikhta nahi hain
      3) Endosperm - main chawal ka dana
      4) Embryo ( germ) - jahan se naya paudha nikalata he agar use uga de toh
      Brown rice = bran layer + endosperm+ germ
      White Rice = Endosperm ( isme milling aur processing ke doran germ layer bhi nikal jati he ) : paddy ka sirf starch part wala
      Sella Rice = parboiled rice =processed rice = isme paddy ( dhan) ko halka boil karke sukhaya jata he aur fir mill kiya jata he ( dhan se bhusi alag karke chawal nikala jata hain). Aisa mana jata hai ki sella process se nutrients jo husk aur bran main hote he woh andar wali parat main absorb kar liye jate hain. Rice researcher mante hain ki sella rice me achcha amount of nutrition hota hain. Jaisa maine video mai bhi bataya hain.
      I don’t know udru name of brown rice. In fact, market main yeh brown rice ke naam se beche jate hain.

      The Indian Agricultural Research Institute (IARI) is also Known as PUSA Institute, Delhi, does a lot of research in agricultural field. 1121 Basmati rice is developed by PUSA. It has hybrid of 2 best quality basmati grain to have best aroma and size. It can go up to 2 or 2.5 of its size.
      Now 1121 is most popular and most cultivated rice in tge Basmati Field.
      Pusa gives numbering like that.

      Nahi humne Rice me PhD nahi ki hain. Khane ke vishay me hume joh bhi kuch thori knowledge uska shreya mere late pitaji ko jata hain. Woh foodie the aur unoho ne hi hume desh videsh ke har tarah ke khan peen se hume bahut bachpan me hi prachit karwana shuru kar diya tha.
