Every book on healthy eating states that everybody should AVOID refined white wheat flour and refined white sugar as these ingredients have been linked to all manner of health problems. Whenever one makes cakes, and especially when one makes cakes for children, it is super important to always AVOID using these two very unhealthy ingredients. This recipe is not perfect for children because it has these very unhealthy ingredients. When making cakes for children it is important to make the cakes SUPER healthy and not just a little bit healthier. You can swap these ingredients in ALL recipes with healthier flours like wholemeal wheat flour or oat flour and you can use unrefined natural sugar, fruit or honey instead of refined white sugar. You can sweeten this carrot cake by adding grated apple to it and chopped raisins instead of half the sugar. And it is always important to put a lot less sugar than the cake recipes state as children have very yellow, weak teeth these days as there is far too much sugar in people's foods and drinks. Many adults have been putting far too much sugar in front of children and themselves. The situation is very bad. Some adults have lost half their teeth before they are even 30 years old in Europe! 'Tooth decay remains the most common chronic disease in the UK' according to an article I have read online.
Instead of egg, you can use reduced milk (but not condensed milk). Rest of the ingredients remain same. Sorry, you cannot use yeast instead of baking powder and baking soda.
Eggs need to be at room temperature then the cake will not crack. Also the oven may be a bit too hot - ensure the temperature is 180 deg c. Hope this helps.

You should always aim to make ANY MEAL VERY HEALTHY!!! A healthy cake is good for everyone! You could use less sugar, even just half the amount stated. You should use only UNREFINED sugar, unrefined salt, 100% wholemeal unrefined wheat flour, unrefined vegetable oil, you could use only organic ingredients. What is whole wheat flour?? It looks quite white and unhealthy. It does not look like healthy wholemeal flour. Also I think it is best to use organic eggs instead of baking soda and baking powder as the raising agent as these powders are manmade chemicals that are not good for your health (people who eat them a lot have gotten very large and are full of health complaints). Eggs are natural and nutritious and better for one's health.

The rule is 1cup of granulated sugar can be replaced by 3/4cup of honey. But personally have not tried this option yet.
