I've tried making caramel a few times, but after cooling, it gets hard and cracks. It doesn't stay liquid. What am I doing wrong? Any advice/suggestions would be appreciated. Thanks
I recently discover this and i was amazed that this is quite similar to our traditional christmas snack here in the Philippines. the ingredients is quite alike and also the name of the dish. their names are quite alike too we called it bibingka and it is cooked in clay pot with charcoal ( top and bottom )

Hi, Please let me know if the layer was checked with toothpick? If the inserted toothpick comes out clean that means the layer is baked well if not then bake until toothpick comes out clean.. It might take 5 more minutes as the timing depends upon oven to oven or next time you can simply make batter slightly thick by decreasing 1/2 cup of coconut milk......
Is bebinca refrigerated or sliced it soon after cooling down? Layers getting separated? Or You can try to bake it again in preheated oven for more minutes....... 👍
Good morning I'm so sorry to trouble u. I made d bebinca & cooled it completely.( kept over night to cool down) Next day when I cut d bebinca it was too soft. At present I kept it d refrigerator. Taste is up to d mark. Baking is where I went wrong. U will definitely have some tips do share with me. Thanks waiting for your reply
If u have only two options to bake and grill then use grill option.... But I request you to try this recipe with half portion so that u get an idea......
Hi ma’am I tried your recipe the taste was really good bt only problem that I had was each layer dint puff so nice it used to get skin like texture and beheath it would remain like soft pudding
Oh😔, Baking timing and heat is very important while baking bebinca. Bottom layer has to be baked on lower heat it might take 10-15 minutes and top layers on upper heat .... Timing vary oven to oven ......
I just hope that the tin /mould was greased with ghee before adding the 1st layer. or just before de-moulding the tin was heated up to melt ghee from the bottom of the pan or may be the bottom layer was not baked perfectly which lead to stickiness.
I just hope that you had used same measuring spoon for sugar and water measurement. You can also try another way to caramelize sugar that is just by allowing sugar to caramelize on low flame without adding water and after Caramelization add water and stir well👍 Let me know the result or for further help👍
I brought the pan from mapusa wholesale shop it's located next to Mapusa tourist hotel near petrol pump. You'll get all types of baking requirements there.

Can I use packed coconut milk?
If the canned coconut milk is combination of thick and thin milk than you can use that.
I have philips oven, And I can't change the heat what should I do for the second layer and other layers should I use bake or grill mode??
