Guess I don’t have to ask for private lesson!! I just wanted someone to hold my hand that’s all….Thank you Ma’am for all your instructions and video’s!!!!! What a great video! When I was a child, my Grandmother always purchased chicken canned in a glass jar at Woodward's Department store. She used it to make my delicious sandwiches for my school lunch... But, once Woodward's closed down I never saw chicken for sale in glass jars again. In fact for many years I have never seen canned chicken for sale at all... Now I am thinking of making some and just bought a small pressure canner. Canned chicken is marvellous! I am 74 years old and just getting back into canning...

    Thank you for your message to me yesterday... so today I tried canning some chicken thighs... they were big thighs, and four fit perfectly into the 750 ml Bernardin jars. I left the bones in... it was so simple. I did it just the way you show here and it turned out perfect! I am getting excited about canning again... I did a lot of canning with my Dad when I was a young teenager as he had a huge organic garden and lots of fruit trees... It was one of the most fun things I did with my Dad... After about 30 years of not canning, at age 74, I am back at it...

    I made my first batch - 8 pints - yesterday in my new Instant Pot Max. Today I made a big batch of homemade noodles. I emptied a jar of chicken, it’s broth plus some extra, a couple of sliced carrots, half of a small onion, a rib sliced celery, cooked gently until the veggies were done, then added my homemade noodles. When they were cooked, I added some frozen baby peas (they keep their color that way), and we had the best chicken noodle dinner I have ever made! I sent Hubs to my 92 year old friend’s house with a pint of this goodness so she can have some after chemo tomorrow. This is beautiful chicken that
    makes a beautiful meal, and I think you are one beautiful lady to have brought it to our attention! Thank you! I am a big fan of ugly chicken and beautiful you! (Your fear is shared, BTW, as I live in a hurricane zone)

      Angel Silvas I used canned chicken, canned bone broth and threw in celery and thyme and lots of black pepper. Simmered 5 minutes and added zucchini noodles and simmered 4-5 minutes. Added a good shot of real salt. It was truly a satisfying alternative. I have dehydrated noodles also and they store and cook really easily

    • @faithwalker2287
      @faithwalker2287 5 ปีที่แล้ว

      K Flan, oh. So you didn’t add the noodles to the canning jar? CAN you add them to the canning jars as a pre made soup? And how do you prepare to dehydrate noodles? Are you talking about dehydrated zoodles or boiled pasta?

    • @kflan3342
      @kflan3342 5 ปีที่แล้ว +3

      So I use squash quite a bit in soups. Especially Mexican Chicken Soup. When I canned the soup with squash they became VERY soft. So I can the soup with what holds up best texturally. So I became an 'equal opportunity food preserver'. I can, dehydrate, freeze and ferment. When I want to eat a soup which needs additional ingredients I bring to a simmer and add in more delicate veggies. Squash or cabbage for example. This week I used fresh zucchini noodles. As my squash and cabbage are producing I noodle (squash) or shred (cabbage) and dehydrate them. When I want to make soup when my garden is not producing I add dehydrated produce to my soups. They absorb the broth and flavor. They will not be the same as fresh zucchini noodles but close.

    So.....I did it the "ugly" way and was pleasantly surprised! Normally, I par cook the can with broth....beautiful cans but a lot more work and not much difference in a recipe. Thanks for posting.

    So easy to open a jar of chicken and heat it up, thicken the broth and serve it over mashed potatoes, rice or noodles. Add a vegetable and dinner is served.

    Glad I found your channel! I live in Central Florida on Social Security, so canning and preserving food is a must. I grow a 30 x 40 foot garden and can the produce. I make my own tomato sauce, and when I can't grow tomatoes, I'll buy 25 lbs at a time and process them. I usually buy 40 lb boxes of boneless, skinless chicken breast from a local meat packing company. It's a little more expensive, but I can fill my freezer and have plenty when chicken is sky-high. I do buy chicken on sale, too - $0.49 chicken leg quarters and $0.99 chicken breast is just too hard to pass up! Most of the time I vacu-seal and freeze meat in 1 lb packages, but if I want "pretty chicken" or other meat, this is when I hot pack it. I buy beef round and sirloin on sale and either grind it or cut it into stew meat, and I'll buy pork loin for chops, and shoulder - that I grind and make sausages. Needless to say, my freezer if FULL most of the time. Now the fun starts....We get hurricanes here. One is actually impending in a couple of days and may be a category 4 - Dorian. That usually means that we'll be without power for a few weeks after it passes. Like you, I don't have a generator, but I do have a gas stove. I can everything in my freezer as it thaws out, so that means raw packing - Ugly meat - good food! No A/C so the house it hot anyway - might just as well can!

    I searched and searched for canning lids on amazon this spring. I wish I had known this was a reliable company. Lehman’s ended up offering free shipping in July so I ended up paying 23 cents a lid. We are always looking for the best deal! Thanks for sharing.

      re: chicken tacos-I usually make my taco meat in the crockpot with a can of rotel....can you add the rotel to the chicken and then can?

    • @briancooper1755
      @briancooper1755 5 ปีที่แล้ว

      Kelly schutte ... I honestly don’t know, thinking yes, but if you were to can some chicken you can just add the can of rotel as you are heating it up. ( notice there are 3 uses of the word can, my head is spinning 😆) It only takes minutes. I empty all the contents from the jar in a pan on the stove, liquid included and add my Taco spices and just cook down the liquid. Sure you could do the same with the rotes.😊

    I shredded/mashed a qt of ugly chicken, added an egg, fave seasoning (any mix will do), grated Parmesan, formed into balls and browned lightly on 2 sides. Sauté bell pepper, onion, add mushrooms & add to chicken. Add marinara and top with more grated parm, heat through and serve!

    The same thing happened to me with my freezer in April of 2021. My husband had to go into hospital and I never noticed the freezer had been cracked open for 2 days as 8 wasn't home much. My daughter-in-law said something was dead in there and we found freezer open. I lost over $500 of food. After that I voted to start canning meat instead of depending on my deep freeze.

    your jar caps you were talking about are made by jarden brands that is the German side of their brand and they are the ones who make all the ball jars and are owned by Ball corporation. Just a side note. Happy canning. I get my lids from them too. They are based here I Indiana. I get mine from a friend that works there. Mine are the test run lids. New, never been use, but it's an incomplete case because they pull some out for testing.

    Went camping this weekend. Took one pint and half jar with me. Opened it for a veggie and chicken stir fry using 1/3 of the jar. Kept it on/ surrounded by ice the next day made the rest into chicken salad with celery. It fed two friends and myself. I then washed the jar and put the remains back in. I had enough for a very full sandwich for lunch the next day. Easy meals off grid. 😊😎

    I have frozen chicken (mostly white meat) and will have to check canning recipe for that.
    UGLY? Make great casseroles or stews or even salads - oh and soup. No meat is all that pretty if you can see it in the jar.
