Shrimp and Vegetable Tempura Making, and TIPPSY SAKE Tasting//Japanese Cooking and Drinking!!!

    TEMPURA Ingredients:
    Shrimp
    Eggplant
    Pumpkin
    Carrots
    Sweet Potato
    Shiso Leaf
    TIPS:
    Keep batter cold
    Don’t overmix the batter
    Start deep frying as soon as you make the batter
    Keep oil at a steady temperature
    Just half of the oil surface should be covered with ingredients
    Oil should be maintained between 340-350 degrees F.
    Tempura:
    Potato starch or cornstarch for dusting
    3 C. Oil
    Batter:
    1 Egg
    3/4 C. Iced water (3/4 C and 4 tsp)
    1 C. All purpose sifted flour
    Whisk egg and water together. Slowly pour egg mixture into the flour
    Tempura Sauce
    3/4 C. Dashi (3/4 C. Water and 1 tsp dash powder)
    3 Tbsp shoyu
    2 T mirin
    2 tsp sugar
    2 Inches daikon radish (grated and squeeze to drain)

    Thank you for all of your videos. We enjoy watching your videos with food and family. My wife said she enjoys vegetable tempura that includes kabocha, and sweet potato. But if we have it, it is always at a restaurant. We have never eaten tempura at home because my wife does not like to deep fry. Maybe one day she will change her mind. Nah, I won't hold my

      Deep frying always makes the house smell... but I think it's worth it on occasion. Eating tempura out is just as good too! Thank you, Howard!

    Watch many of your videos starting last summer to prep for an Oahu trip last August. Great videos but not a fan of starting to commercialize the videos with ads.
