This is not called taming, this is called learned helplessness. The bird eventually knows he can’t do anything to avoid you so he just stops trying. It works well with most birds but be careful, the stress might actually kill some.
I only have experience with zebra finches (6 years) but if your bird is on an all seed diet it might be a reason, but also I have found that one of my female finches has always been significantly larger than her mate and chicks. Your bird might just be larger.
I have zebra finches and they have trouble flying outside of the cage just like this bird as they are not used to flying in open space, I assume the same with this canary. (And they are still young)

No he didn’t I have a canary and I found mine in the park and it still doesn’t wanna fly that much
