I’m from Lancashire in the 60s mom made the pastry put on a plate then sliced cheese then sliced onions then cheese then onion and then put on the pastry top and into the coal fired oven and no boiling the onions just in the pie as you have sliced them place sliced cheese on that was a cheese and onion pie in the 60s it was quick and simple tast good to we had that and baked beans if we ware lucky dad would take it for lunch for work simple no fuss

I appreciate that they're probably having it for their tea that night, but it really annoys me that we don't get to see how the filling looks once cooked😕👍

My Aunty Liz from Blackpool used to make these for us and would bring them to scotland every christmas for us, been trying to find out just how she made them, only thing she did different was she cooked her onions slowly so they turned sweet. Many thanks .
What i do is fry the onions with butter salt pepper mixed herbs 🌿 add some flour and milk so its a thick sloppy consistency add my soft potatoes and cheese mix throughly then thats your filling it tastes really nice much more to it than plain cheese and onion pie but i did used to make it thus way i do find its much better the other way though love stacey x

I had to laugh at the title proper cheese snd onion pie. Many years ago a cook was published under the title the pressure cooker explained. Not long after another book came on the market under the title "The Pressure cooker properly explained. I had to laugh at the inuendo.
It,s not got a deep enough flavour.for me. Personally I find Lancashire cheese tastes better in an egg, cheese and milk proper Lancashire supper dish done in the oven! Maybe i should make that on here and you will agree!?
Well you would use puff pastry rather than shortcrust and probably not as much water in - maybe just a little water rather than the full amount. Possibly a teaspoon or less. Try it out and let me know!!

I have made the butter pie version which is the same only it omits the cheese. It looks much like an apple pie and tastes heavenly!

What sort of cheese did you use and what would the American equivalent be?
i always use Asda extra mature cheddar cheese. Is Asda Walmart to you? As long as it is extra mature cheddar it is fine.

could you use milk instead of water and if you did would it make a better cheese sauce in the pie
no i wouldn't the water is to make it moist so you don't need a sauce - it would change the flavour.
Can you just sliced instead of chopped onions or would it make a difference?

I mix my grated cheddar with the onions while they are still hot (then cheese melts and is distributed evenly throughly in the onions).
