WHEW!!!! I could hear her cat meow in the background before she said something, but didn't realize it was on the video at first. Since it was faint, it first scared me that one of my cats got outside, made me frantically jump up out of my chair to look for my babies. What a relief!!! Made my heart skip a beat for a moment. - BEAUTIFUL Furbaby you have!! ALSO have to add...... little risky working on your beautiful white quartz countertop with beets and no protection. Quartz can/will stain, I kringed a little, yikes!!! (worked for countertop fabricator for 7 years) :)
Magic erasers are my best friends! Haha! You're right though, it's still a little scary to only have a cutting board when working with beets. Should probably use plastic wrap under the cutting board in the future... So sorry for the cat scare! Glad it wasn't one of your own escaping outside. :-)
I really like this method. I tried canning the boiled beets but they lost so much color my borscht looked like mud. Thank you. Just bought some beets i will be trying your method. Sounds so much better and they looked so pretty. Thank you.
Wonder if the roasting vs boiling resulted in the great color after canning? I boil and my beets lost some color. I have to use 15lbs due to my elevation.
Beets still held their shape and were slightly firm. If you like them to be more firm, you can simply reduce the baking time before processing. Roasting adds extra flavor and helps to remove the skins easier. :-)
Have you try it on marmalade? It’s so delicious with cheese cream I completely recommend it to you, I do for home and business. the Michi (cat) was asking you food! Haha
Umm.... no I have not tried beet marmalade, but that sounds absolutely amazing!!! I have now added that to my list of canning recipes to try. Thank you for the suggestion! :-D

I canned up my beets and the way we love to eat them is to toss them with garlic, thyme, butter, and some tallow and roast them again along with our tators, carrots, and parsnips. I love parsnips...but wasn't a huge fan of beet roots, though I love the tops! Anyyyways...roasting them up like that makes me and my hub fight over them! HA. Still can't get my son to eat them though. Just the tops for him!
