Hog Butcher Day at The Crouch Ranch, our first American Guinea Hog

  • Here is our first American Guinea Hog, raised and processed at The Crouch Ranch. We have been looking into different breeds of hog and decided to give this one a try. The American Guinea hog tends to run a bit smaller, perhaps 150 lbs as opposed to the 250-300lb processing weigth of the breeds we have been raising. They were once a very popular choice for homesteaders but as the need for cooking lard reduced over the years (these hogs make alot of wonderful lard) The breed was replaced by the faster growing larger market hogs that we see in the grocery stores today. By 1900 it was believed that as few as 100 of these hogs remained in the United States and they are considered one of the rarest Heritage breeds today.

    The Lady of the ranch easily beats the hog for looks. Yall did kill the hog but it was not abused, you helped it complete its destiny in becoming food on the dinner table.

    Thanks for the video. We did 4 hogs a few weeks ago. We let ours hang for atleast 24 hours, before cutting up, usually longer. So, we usually only butcher in the spring and fall. I bet where you live not cold enough to let hang and have to process right away. Good to have these videos for people to see.

      Hogs you don’t really need to hang so we break down into primal and cool down to butcher the next day 😉

    Great idea to use a pressure washer! We plan to do our 1st American guinea hog this fall. We took the last one to the butcher, but i think we can do this!

    He looks a lot smaller than the guineas we used to raise. The ones we had we're about the same size as a Hampshire. Both had some good lard on them and some good thick fatback!

    I don't know what you do with the Pork Butts ....however.....we make about 400 lbs of home made dried sausage every year. We bone out the pork butts and the deer meat to get it ready for the grinder. We take the bones from the pork butts and salt and pepper them with coriander sprinkled on generously. Roast them on the pit and try to eat just one.

      Pork butts are what you use for pulled or shredded pork like in tacos or sandwiches 🥪

      @@3MISSISSIPPI it's AFTER you get most of the meat off of them. there is still a little bit left. salt / pepper/ coriander .... you will probably write me back and thank me. I was dating this girl and she was very "CITY"
      she turned her nose up at the bones, but I finally convinced her to just try a bite. After that she went through about 8 of 'em.

    You did a beautiful job skinning her. Lots of lovely fat and lard there. I thought about using a SawzAll for splitting my hogs but didn't pull the trigger. I will now. I also never though of using the Power Washer... I always use the garden hose for bathing them down. Boy, am I glad I found this video. Thanks gents and lady.

    Hot water or blow torch? should have used both methods, as skin on helps with flavor..and gives great crackling

      We don’t like to cook the skin when we are butchering . We are pressure washing just to clean hide before breaking down primals.

      AGH are smaller and have a great fat layer for lard rendering so we got about 100lbs off that little one .

    I want to start raining my own meat this year I'm planning on buying two pigs one for my family and one to sell. Then maybe a beef for my family also no chicken I hate eating chicken but I'll eat eggs . And are the best look lady I've ever laid eyes on

      I raise my own eggs I was raised on a farm we had dairy farm for many years five years ago I move to the mountains and I'm starting over as far as eating chicken they are just a nasty animal they stink and will eat anything on this planet they come across that's why I won't eat chicken

    Nice video Syd & Mike. Hadn't seen one of the smaller American Guineas before. Seems like it was WAAAY less work, of course. It will be interesting to hear some taste comparisons between the breeds once you have had a chance. Keep it up! I agree with #joshonyx101 that if more people killed their own food there would be less waste and far more perspective and respect for the animals that feed many of us....

    Why did you take the skin off? Pour boiling water over the skin and you can scrape the hair off with ease.

      We have done scalding and scraping but we really prefer skinning as we don’t like the skin

    When I was a kid my first job was mucking pig stalls... The boss always hung a hog from the tractor bucket by his back legs and slit his throat so his heart would pump out the blood. wasn't that better than shooting ???

      Shooting first it’s lights out ... they are no longer aware . The heart continues to pump which is why we immediately slit the throat to pump out the blood .

      This pig breed is much smaller so was 125 about and prob about 80-90 lbs of meat I’d guess .

    You should have soaked it in boiling water for five to six minutes then use the power washer to remove all the hair. That pig would be cleaned in no time and you get to keep one of the best parts of pork and that is the skin.

      I wouldn't go that far. Billions of Asians eats pork skin and yet they are skinnier than Americans and healthier to boot. The skin and fat are prized in Asia and Eastern Europe.

      A lot of Americans eat way too much processed foods as well as just too much of everything. Things that maybe around the best for us need to be consumed in small quantities infrequently . Other cultures seem to understand this better than most Americans.

      As a proud gun owner, I support the 2nd amendment 100%.
      But alcohol and guns don’t mix. Beer loosens people up........in the wrong ways sometimes.

    How old was the hog? We just got a breeding pair and they're about twice that size but a couple years old. I don't want to wait that long to butcher lol.

      We don’t breed ours so typically we butcher between 5-8 months depending on breed . Somewhere between 175-225 weight . A boar that’s a few years old and was bred is likely to be a bit gamey so just keep that in mind .

      @@3MISSISSIPPI Let me clarify-- we got a couple of their piglets as well. We're butchering those but keeping the breeding pair. I don't want to wait years to butcher the two piglets lol. We'll probably aim for around 8 months then; thanks for the info and the video.

      Awe I see ... depending on breed, sex, and if you’re doing it all yourself you could probably do six months ( often males we do at 6 and females at 8 )

    Skinning is so much easier !
    We always shaved them cause that’s how my dad did it in my grandfathers slaughter house growing up . couple years ago my dad couple of his buddy’s and me raised & killed 14 pigs between us shaved them all 🤬🤬 now we skin lol

      scald them and the hair comes of easy by scraping the hide. You will not ever have crackling corn bread if you skin em . The way we do it down south GA

      She was probably about 150ish . She was close to 8 months . We butcher wrap most cuts to freeze but some things like bacon get vacuumed. Bacon , hocks , ham and the Canadian bacon all get cured. 👍🏻

      Not as big as other breeds ... most top out at 150 lbs at breeding age

      Got it. Thanks for the quick reply. Not so sure of who makes the YT rules. There are many videos of feral hogs being culled at night, and from helicopters. There are many hunting videos showing very distinct hits on the animals. I don't expect you guys to answer this unless you know some secrets about this. Again, thanks.

      It has to do with what they will monetize . YT is owned by google who is very .... Liberal . You can show it but they will limit your channel in many other ways like doing live shows etc .
