I have that same smoker. I've smoked and grilled a lot and it always comes out perfect. Great smoker to hang around and drink with friends and smell the goodness coming out the smoker.
Thumbnail is amazing! Really like the videos where Mike explains pork cuts...seems like he knows his shit about pork belly. Lot of people, especially up north,, don't know pork belly from bacon, from pancetta, from ham ECT. ACTUALLY learned a lot from the pork videos.
Well you might have the fire at 150 degrees but Syd is OMG probably 1000 smoking degrees!!!! Ohh my lord I love that woman. Everytime I watch a new video I think to myself how in the hell does this absolutely stunningly beautiful lady not melt everything around her seriously like how do the plants and house not just spontaneously combust and burst into flames and leave the earth scorched everywhere she walks!!! I've said it before and Ill said again again, that woman is 100% PERFECTION.
One of my customers and friend is crazy about smoking meat my wife is not crazy about the taste and also thinks I am crazy for prepping. Glad I found your channel just watched Mike process a chicken very cool thanks guys🇨🇦
you describing a sweat lodge. each session is generally called a door, pending on the medicine man or shaman. the little things in the tree are prayer ties. the "herbs" are most likly bear root(osha root), sage, ceder, sweet grass and willow bark, non of which are a hallucinogen. the safest spot to breath in a sweat is to put a cloth over ones mouth and go as low as you can go to the ground or between your legs. being you where doing this with the Nez Perce, there may have been some cactus thrown in there. just clearing up some things. but your spot on with the description.
Ok, on the eight try, and over two weeks, I finally made it all the way through this video. The chicken plucking pool scene is a close second to this one.
So if this is like my brinkmann, I suggest you turn the ash grate around. It has a channel that will butt against the opening of the firebox and it will drag the smoke across your smoker. Use your bricks on the middle and right side and don’t use the wire internal handle on the right hand side for elevation. Oh and thank you for sharing beauty.
I used to have a Weber vertical smoker. I found it really hard to keep a steady heat. It was either too hot or not hot enough. I was still able to get the job done but you had to baby sit the smoker. You have a great smoker and know how to use it. Apple wood was my choice wood to use as well. I bet your bacon is the best around !! What more could a guy ask for ? Smoked bacon and a smoking hot trophy wife !! :)
Mike that was a great Idea with the angle Iron. I am going to do that next time I smoke. Great video yall two. There is nothing better than some good smoked meat.
Great video, beautiful scenery I didnt even notice there was A bbq pit in this video till I read some comments and someone said your smoker leaks. After this one is over I'm gonna watch the one titled , best pepper meal.
GRILL TIP FROM A ER NURSE !!!!! Do not use wire brushes on a grill ! I have had 2 patients that ate food with small pieces of wire that caused serious problems. One got caught in throat cavity and the other in the stomach lining.
J.K. Cooke They do sell wooden grill cleaners nowadays. After using them once or twice they fit your grill perfectly and clean better than wire brushes.
Yeah that made me hungry all right. At first I was wondering why you were glazing the meat so early...you know, the fear of burning. Then it dawned on me...you're not trying to cook it all the way. Well, what do you expect...it's after 1 in the morning. LOL Thanks for posting. Looks awesome!
I subscribe because have experienced native american culture. My ex wife is white and lives in Idaho and understands native american culture as well. Im full blooded navajo (dine). I have four wonderful kids that are half white and native.
I was wondering if you ever ended up growing at using a garden and then growing organic celery I read somewhere that has you dehydrated maybe freeze dry it then you can use it for smoking your Meats.
Wow! I thought this would be click bait! Now that's a body by bacon! Very informative, great tips and nice puns, haha! I have a barrel smoker as well and smoke quite a bit. Cheers! I am a new subscriber. Swine is divine!
OMG the innuendos were hilarious! As to maple syrup that is da shit right there,my pops and his pops utilized pure maple syrup on meats and even smoked salmon.
Great info. Never have thought about maple syrup. Do you guys have a smokehouse? Is there a brining video? Did not know the Nez Perce used sweat lodges. What book on them would you recommend? My people are the SE variety. Thabk you for another great video. Can't wait to try the maple syrup.
At 150 probably not you are correct. I make it a habit of always putting that pan with the water & rosemary in there when I smoke.. That way if the temp does get up over 200 the water will begin to evaporate and help control the temp a bit. On hotter smokes the rosemary really comes out in the steam :) (Mike)
HAD TO KEEP REMINDING MYSELF THAT YOU WERE SMOKING PORK BELLY. FOR SOME REASON I KEPT THINKING IT WAS BUTT. NOT QUITE THE IMAGE I WANT FOR MY BACON TUTORIAL. GOOD LUCK! IT WAS FUNNY. I WILL GIVE YOU THAT..LOL
Hey Syd. Gald you got a video up on how you did your Bacon.. Your Maple syrup? Is that store bought or good ole stuff right out of the sugar bush? Like we get here in Michigan?

Mike...You and Syd sure have a "different" sort of discussion on the patio during your man rubbed meat smoking sessions....???...Ham Hocks..Now that's Ole School... ;-)
Understand completely! I think we all have that list! The smokehouse was a real game changer for us though.....ours is 4'x4' and about 7' tall, so it's plenty big for half hogs or deer or whatever. 6 whole bellies at a time with no problem. Fold up shelf for jerky, chickens, turkey, fish whatever.
Yep, sure my list will outlast me! Damn list will be laughing when they lower me in the ground! Job security, I guess. Keep up the good work! Holler if you ever get down this way! We'll burn some meat, sip some whiskey, drink a few beers and lounge in the spring fed pool.
That cameraman deserves an a award.
I have that same smoker. I've smoked and grilled a lot and it always comes out perfect. Great smoker to hang around and drink with friends and smell the goodness coming out the smoker.

I really like the idea of rosemary in the water pan. At 150 degrees did it really do anything though?

Greetings from Sweet Home Alabama....Enjoy your videos! Build yourself a smokehouse, you will not be sorry!
It’s in the list of eventually 😉
Understand completely! I think we all have that list! The smokehouse was a real game changer for us though.....ours is 4'x4' and about 7' tall, so it's plenty big for half hogs or deer or whatever. 6 whole bellies at a time with no problem. Fold up shelf for jerky, chickens, turkey, fish whatever.
Sounds great ! Yes it’s such a long list 🤣🤣
Yep, sure my list will outlast me! Damn list will be laughing when they lower me in the ground! Job security, I guess. Keep up the good work! Holler if you ever get down this way! We'll burn some meat, sip some whiskey, drink a few beers and lounge in the spring fed pool.
