Lemon Raspberry Cake
Recipe:
2 eggs
I cup sugar
1 cup sour cream
1/2 cup olive oil
1 tsp vanilla
1/4 tsp salt
1 Tblsp lemon rind
1 Tblsp lemon juice
2 cups flour
2 tsp baking powder
2 cups raspberries (plus extra for decorating)
1/2 Tblsp cornstarch
1/2 Tblsp lemon juice
Lemon Whip Cream
1 & 1/2 cups heavy cream
1/2 cup icing sugar (sifted)
1 Tblsp lemon juice
2 tsp lemon rind
Bake at 375 for 55 minutes or until a toothpick comes out clean.
