Don't use a knife to cut the layers, use a piece of thread. Stretch some thread between your two hands and kinda 'slice' it through the layers. Start at the the back and work it towards yourself. Perfect cut every time.
@@TheKazadoodle yes it works. You can use dental floss too. How you do it is wrap the thread all the way around the middle of the cake. Then cross the thread and pull it like a garrote. Cuts it clean every time. The key is having it even.
I only have one fridge and can’t spare the room. If it’s cold enough outside I put it in my garage. But we had a warm day and I was afraid. So I’m doing in a day and a half ahead of time and going to try sticking it in the freezer on and off in hopes it speeds up the process. Wish me luck!! This is my fav coconut cake!! So rich!!

Definitely going to try this one out. Here's a tip on how to slice a cake without messing it up. Use non flavored flossing thread about twice the size of the cake. Then slice the cake in half using the thread in a sawing motion. Success guaranteed! Hope you understand my poor English writing. Love from the Netherlands

Vinnie I will share a way to slice thru your cake layers that is a never fail. Take a string even a good heavy duty sewing thread will work just fine wrap it a round the middle of each layer cross your hands over each other and gently pull the ends of the thread toward you.Make sure the thread is even all around the layer when you start pulling. you will have a nice even cut with no breakage. I have used the method for as long as i have been baking cakes. Hope this works for you.

You can cut even layers by taking a ruler and measuring halfway up the layer then marking it all the way around with toothpicks, and then take a piece of dental floss and wrap it around the cake crossing it over itself and pulling in one smooth motion. ladybugcarrie To us it is better right out of the fridge. But, it can sit for a bit before you serve it. I think the filling sinks into the layers of the cake and just makes the layers so moist. All I know is that if it doesn't sit it is not as good.

mayday that looks so good. Thx Vinnie, mayday your over may be like my and so i what i do is i bake things in less minutes that it asks for exp. if it ask for a 35 min. in the oven i put it for 30 and that always works for me.hope it helps with future cakes :)

My grandma would use fresh, whole coconut and use the coconut water to bake the cake, so you get coconut flavor throughout the whole cake.

I don't see why you couldn't use real whipping cream. It looks like about a cup, cup and half of cool whip so about the same amount in whipping cream.
