    I viewed this video when it was posted and made the cake exactly as Vinnie instructed. Although it took up one full shelf of my side-by-side fridge I left it in there for the three full days. Well worth it. I am now a rock star at work because this cake is amazing. Super moist crumb. Fabulous combination of flavor and texture. Thank you Vinnie!

    Don't use a knife to cut the layers, use a piece of thread. Stretch some thread between your two hands and kinda 'slice' it through the layers. Start at the the back and work it towards yourself. Perfect cut every time.

      @@TheKazadoodle yes it works. You can use dental floss too. How you do it is wrap the thread all the way around the middle of the cake. Then cross the thread and pull it like a garrote. Cuts it clean every time. The key is having it even.

    I only have one fridge and can’t spare the room. If it’s cold enough outside I put it in my garage. But we had a warm day and I was afraid. So I’m doing in a day and a half ahead of time and going to try sticking it in the freezer on and off in hopes it speeds up the process. Wish me luck!! This is my fav coconut cake!! So rich!!

    Definitely going to try this one out. Here's a tip on how to slice a cake without messing it up. Use non flavored flossing thread about twice the size of the cake. Then slice the cake in half using the thread in a sawing motion. Success guaranteed! Hope you understand my poor English writing. Love from the Netherlands

    It sounds scrumptious!! My mom used to make Italian Cream Cake that somewhat reminds me of this. That is another cake that gets better the longer it sets in the fridge. It's one of those recipes where you put each bite in your mouth but wait and savor it before you actually start chewing!! Sounds like Ms. Betty's cake evokes the same sensation!! Love hearing you whisper at Vinnie!

    Vinnie I will share a way to slice thru your cake layers that is a never fail. Take a string even a good heavy duty sewing thread will work just fine wrap it a round the middle of each layer cross your hands over each other and gently pull the ends of the thread toward you.Make sure the thread is even all around the layer when you start pulling. you will have a nice even cut with no breakage. I have used the method for as long as i have been baking cakes. Hope this works for you.

      Dental floss will work too and it's stronger than regular thread.

    Looks good. I use white cake mix, with coconut milk for my liquid and poke tiny holes in the cooling process and drizzle with cream of coconut :)

    Thanks so much for showing how to dissolve the sugar in the sour cream! I had a recipe for this cake and I have made it before but it was always runny because I tried to stir it too much with the whipped topping!

    You're adorable! You must be from my home state of Tennessee because of your accent! My sister made this for a dinner party and it was the best coconut cake that I've ever put in my mouth!     My grandma would use fresh, whole coconut and use the coconut water to bake the cake, so you get coconut flavor throughout the whole cake.

    OMGosh, this looks amazingly yummy!! You did a great job with cutting your two layers in half, that is not an easy job to do! I think you did a great job with icing your cake too. Another job that I'm not the greatest at either. lol There are a lot of foods that get better with time, the flavors can really get through out the whole recipe, making it so yummy! I can't wait to try this cake out Vinnie. I think it was a big hit at your Thanksgiving dinner! Thanks for sharing your mother's recipe with us.

    You can cut even layers by taking a ruler and measuring halfway up the layer then marking it all the way around with toothpicks, and then take a piece of dental floss and wrap it around the cake crossing it over itself and pulling in one smooth motion.       Megan Kymsdottir Cool whip is basically a vanilla flavored whipped cream. It is premade and we find it in our freezer sections of super markets.

      Cool Whip is non-dairy whipped topping made to look like whipped cream. Dream Whip, which research says is available in Europe, could be used. It's said to be with the jelly at the market.

    This cake reminds me of a cake we have in our family Pineapple Cake... the pineapple is in the frosting but it is basically like this cake! Yummy! I'm going to try this one out too!

    Have you ever frozen a coconut cake? If so, how do you thaw it? Room temp for 4 hours or in the refrigerator for a day?

    Not to be rude, but might I suggest that you toast the remaining coconut you used to decorate the finished cake? That would add an extra layer of flavor and an extra pop of color and a wee bit of crunchy texture. Just a thought. Thanks so much for all of your amazing videos.

    I am going to PIN this to my Would Like to try Board. My FSIL loves anything coconut and will bake this for his upcoming B=day. Will let u know the results. I have cooked things before where the longer it sits the better and I know why. Was curious as to why the more days this cake sits the better. Also, should the cake be served wright out of fridge or can be served room temp? Thanks for sharing. Enjoy the rest of your Holiday season.

      ladybugcarrie To us it is better right out of the fridge. But, it can sit for a bit before you serve it. I think the filling sinks into the layers of the cake and just makes the layers so moist. All I know is that if it doesn't sit it is not as good.

    mayday that looks so good. Thx Vinnie, mayday your over may be like my and so i what i do is i bake things in less minutes that it asks for exp. if it ask for a 35 min. in the oven i put it for 30 and that always works for me.hope it helps with future cakes :)

    Save yourself with $2.00! Buy 2 sets of Aluminum Foil Cake Round pans at the Dollar store. Then pour cake mix evenly into pans. Works every time w/o the trouble of trying to evenly cut the cake in 2 layers. The only person who can Icing and Cut layers of cake perfect is Martha Stewart.

      I don't see why you couldn't use real whipping cream. It looks like about a cup, cup and half of cool whip so about the same amount in whipping cream.

    Try using a long piece of dental floss to cut the layers in half. Put the layer on a cake pedestal for easier access. This isn’t an original idea so maybe Google it if you’re not quite sure what I mean.😀

      scrapsandthings1 not sure, I think you might could use crushed drained pineapple. We talked about that some time ago just haven't tried it.

    Sorry to be picky, but white stuff shows up better in colored bowls, a different color for each, if possible.

      Tee Bee yeah, we saw that. I only have white bowls in that size. I am a white dish person cause they go with every season. Thanks for the tip!

    I thought this was sour cream coconut cake made from scratch; not yellow cake from a box with coconut icing! cool whip? and someone paid $50 for it? 😖 oh my

      +Heidi Clark you should make it from scratch. I'm sure you could adjust all the ingredients to fit you diet and lifestyle. I bet it would be delicious. We sold that cake for $50 every year in our fundraiser.

      Heidi Clark this is still a coconut and sour cream cake. just cause u wanted it to be different doesnt mean its not. i guess everyone had an opinion but sometimes yours isnt always the right one! he did a great job then and i bet it is still the same!!

      Heidi T. I've made this cake before it's just like my grandmother's recipe and it's worth $50! It's a delicious cake and even though it's not many ingredients people always love this cake. It is one of my favorites!
