Digging the new look 👍🎉 btw 东北人家 as the name suggest is not a mala place leh. Most 东北 ppl don’t even eat spicy food. Recently I had the 辣子鸡 at 太二酸菜鱼 mind blown. Juicy chicken and it really is spicy.
If you are okay with going to like restaurant type places. Mapo tofu from chen mapo tofu / shisen hanten 水煮牛 / 辣子鸡 from 太二酸菜鱼 ( Else you can try 家乡小厨 at chinatown
Ehhh.... My 2 cents, I think you shd focus on ONE mala dish, like mala xiang guo and maybe comment on the ma, la, xiang, and overall with the standard ingredients this video like not here not there
Bro your hair like John from TDK lmao. Anyways I reco Hot Hideout, 辣不辣 (Bedok) and Shisen Hanten as series finale, for the sake to see how much we can push mala at the highest level (I mean, it's one star and used to be two?). Otherwise I think Si Chuan Dou Hua is a good second, but I do feel it is heavily localised. Still a good benchmark though.
I wanted to gate keep, but I think they deserve all the flowers. 巴蜀演义 at Bedok is the best sichuan cuisine you going to taste. This is my top. You can also give 成都 at Telok Ayer a shot. This will be my second.
Way Lau Eh! Alderic going to a 东北 restaurant to find the best 四川 cuisine is like going to Chicago Morton steakhouse to find the best Tex Mex or best southern BBQ. What were you thinking?!?
You MUST try Shisen Hanten! At least their mapo tofu which is their signature family recipe. And try Qi - House of Sichuan too - their spicy prawns is one of the best I've had, but it's not that spicy
Yan Lai Ju (宴来居), 友间厨坊 A Kitchen (Jurong) Both Level 1 and 2 restaurants at Vision Exchange (Jurong) are one the best chinese cuisine i ever tried! Esp the lamb skewers must try!
You may wanna consider the mala stall in Marina Bay Sands foodcourt. The Xiang Guo flavour is pretty good. Also one off the beaten path at AMK industrial park 2. Blk 5023. 重庆私房菜
Alderic, can u do mala like the take your own ingredients kind? Maybe do another series for China-Chinese restaurants. Anyways, great content keep it up!
Most of the mala stalls doesn’t have the “ma” sensation kicks Been looking up and down but cannot seem to find a good one. I need recommendations!!!!!! 😢
@@Alderic. Great! could you do 2 series, one series to search for the best mala in restaurants, and another series to search for the winners in hawker centres. i'm personally interested to know the hawker malas so that i can add to the list of my everyday lunch places. Really impressed with your spice level, am sure you can survive 2 series of mala challenges ;)
13 is better for this series because there are so many good mala places. plus you are combining malaxiangguo. if youre doing something like laksa then 10 is fine tho
Go try Sichuan Tianfu Restaurant (天府川菜)! A lil under the radar but their dishes are super authentic when it comes to mala/Sichuan flavours and they’ve recently opened a second brand along Beach Road. Must try dishes include their laziji, mapo tofu, 沸腾鱼, 干煸肥肠 and their dry pots etc
Ohhhh I do have a recommendation, but like my previous one (rockymaster premium laksa), this may also be a little controversial as well, because it is a fastfood chain. Try 杨国福 麻辣烫 from Northpoint. U do not have to go ham with the spicyness, 小辣 will do so as not to numb your tastebuds to the taste, but do get the soup version. The beef stock was rather pronounced, but just enough to complement the mala. The dry version is basically mala paste which u dip your blanched 料 into, very exciting flavour bomb, but it is a flavour bomb. I prefer the soup version because it is a little nuanced. Out of all the 麻辣烫 I've tried, I believe YGF is pretty up there, 宫源麻辣烫 etc can't fight.
Wan Xing Mala Hotpot near Kovan MRT Station. Standalone Mala place on the side of the road. If you go there I recommend putting the you tiao and duck into your mala.
All the people suggesting Shisen Hanten, it's good, but it's closed now. Chef chen mapo tofu is similar, but much less spicy and ma, and more salty. My experience at Si Chuan Dou Hua was pretty bad I'd suggest Chengdu restaurant at 96 Amoy street Sichuan Alley is also good, but it's not really a mala type of place I feel, more ma.
IT WOULD BE A CRIME not to try out Green on Earth Vegetarian Cafe......yes you heard me right - VEGETARIAN. I've had mala xiang guo all around Singapore but this is by far the BEST MXG and Mala dishes I've had, and that's a lot coming from a meat eater.
Hi alderic! I suggest this restaurant called Peppercorn Mala Hotpot which is at (Coronation Plaza)-椒点(加冕分行). The mala I feel is quite nice and the la zi Ji is really good in my opinion.
New series baby! Might be too early to call out which Mala dish you will be reproducing for the finale but I'm calling out 麻婆豆腐 and 辣子鸡 for the finale dishes.
My go to places for mala: Hot Hot Pot @ Food republic, They deep fry some ingredients such as brinjal, fish, tofu, lotus root etc, instead of boilling all the ingredients like other stalls. Got to add 2-3 eggs along with their handmade noodle as well. they have a couple of outlets so your mileage may vary. Tried the outlets at suntec and causeway point and those were great, but prices are not cheap. La Bu La @Tampines, Good mala along with good side dishes, hard to go wrong 老味道mala @ marsiling, the only mala place that i know of that has roasted pork as an ingredient If you are going to Chongqing (which i am 100% expecting ;)), gotta try 渝大师 hotpot.
Do give Ming Sheng Mala Spicy Pot at whampoa a try. Pretty good mala xiang guo there. Not too oily and they remove most of the chilli before serving. B
Hi Alderic, from the name itself, I know that mala would not be good. Dongbei (Northeastern) Reigon in China focuses more on savoury and sour dishes rather than mala dieshes. (So think more on the line where they specialize in sweet and sour pork, Yuxiang Pork shreds or Yuxiang eggplant or Chinese cold salads.) So if you want good mala, I would suggest focusing more on resturaunts that are named after Sichuan or Sichuan areas (like Chongqing) The ratings being high on Google probably means that it's the non-spicy dishes that's considered good.
that actually makes so much sense. I kinda knew that in the back of my head but didn't put 2 and 2 together. will look out for more sichuan places from now.
Arguaby, ma la is a style of cooking? So there are gonna be so many different styles of food cooked in ma la form, like hotpot, soup, xiang guo, etc. anyway, one of the lesser known, but imo very well down xiang guo place is the ma la xiang guo place at alexandra village, beside the dessert stall
I think try the stall called 川味坊香辣蟹 from people's park food centre, it is beside tiong bahru Pau. Tried many stalls around chinatown area and their 辣子鸡 is the best. Very fragrant with the tender thigh pieces. But I have to caution that the spiciness is not a joke. If you take mcspicy as benchmark, it is at least 2-3x of it. Would like to have it more often but I have to admit my defeat to its spiciness 🥵
I must admit I’m a bit confused about the direction/scoping of this series. Are we talking more of general sichuan cuisine but limited to dishes involving mala flavors? Or are we talking about the specific dish of mala xiang guo? Based on this first video, it seems like the former. In which case, how are you going to compare different places unless the intention is to order mostly the same dishes across locations. And then there is the problem that the price variation across locations may be in orders of magnitude - e.g. Sichuan Dou Hua which some comments mentioned, vs. some Sichuan style ‘tze-char’ place at a coffee shop. However, I think most Singaporeans (I assume the bulk of your viewers) would associate the term “mala” with mala xiang guo, which I also presume you are referring to when you said you ate mala very frequently. This sounds like the most apples to apples comparison since it’s focused on a single dish, which is useful because I think it happens to also be the most frequently eaten mala dish over here. And then there is a whole category of mala hotpot which I don’t know if your series includes. Don’t know how you are going to do all of this over ten episodes which means your coverage may be spread too thinly across each mala dish type. Nevertheless, enjoyable and interesting video as usual.
Not Dong Bei, but Chong Qing... You should try this Chong Qing "Cai Png" store in geylang. (Chong Qing Xiao Mian Geylang 27A 重庆小面 - 521 Geylang Road, Lor 27A Geylang, 389477) Found this stall with very interesting taste... different style from our local Cai Png. I think they're catered more to the China people living in Singapore. The dishes taste and flavours are very dynamic with something like layers of taste... unlike our local cai png dishes which has a very singular taste to each dish. I won't say it's very good, but something different and interesting. And they have some interesting other dishes rather than just cai png. Worth a try even if you're not planning to make a video for youtube.
Dude you got to try this mala place located in People’s Park Complex called Hometown Mala Hotpot Mala Tang which is in an obscure part of the mall. The moment you see a sign outside called Spicy Bangkok you know you’re heading to the right place! It’s not Thai but they didn’t bother changing the sign LOL but the food is so cheap!
Calling it now. Alderic flying to China to sample birthplace of mala for 2nd part of the series.
