No not the fancy dtf version or it's many spin offs, but the simple zichar version that you order with simple ingredients that when done right, is a fantastic testament to a chefs true skill and ability to use simple ingredients to create an amazing dish. This dish nowadays is haphazardly cooked in a hurried manner that results in a mushy barely fried rice with zero flavor that begs for your green chilli or Sambal to even make it palatable. Please make fried rice great again!

The best mlxg I eaten was at wisma food court, can't find one dat beats it. The chef really knows how to cook a gd mlxg, sausages and potatoes are well caramelized and the veges are crunchy, most impt the mlxg base is really savoury. U shld really give it a try 👍

ngl, the best mala i've ever eaten in my life is hands down the peace mansion mala - The 24h food court right below all the china discos. Its done by this friendly chubby chef with a thick china accent. The Spice/Numbness/fragrance is spot-on. Due to the close proximity of my house, I'll get a fix almost every other day. Many friends would drive down to takeaway this legendary Mala. Sadly, its now gone and the whereabouts of the chef is unknown. Unfortunately, no mala I've tried after could give me the same longing for that GOATED Mala. Lmk if anyone knows where the stall/chef is now.
Had a really good mlxg surprisingly at MBS food court, the prep and doneness was really good just take note their med 辣 can be 大辣 compared to other places. Also dont forget to get them to add some black vinegar to add even more complexity to the flavour.
7:50 , I agree with the "MA" flavor- it should be balanced or maybe even a little stronger, but definitely not reduced! Some places actually serve the MA sauce as a condiment, so keep that in mind too. I'll definitely keep watching your episodes to see when the "MA" becomes more prominent!
The kungfu mala at Simpang Bedok is superb. Must add 2-3 eggs inside because the scrambled egg goes so well with the mala combi. I stay in the west and yes I travel all the way there to eat their Mala. Not the cheapest but one of the nicest.
btw, i havent tried yet but kept getting recommended to it at times i wanted to eat other stuff and also got turned off by the queue... could you do a review on "Yang Guo Fu Mala Tang"
I'm a mala mega fan and I only eat dala. The mlxg at s11 coffeeshop at 51 Ang Mo Kio Ave 3, #01-03 Big Mac Center, Singapore 569922 is the best and most consistent I've ever had.

many mlxg places here replaced sichuan peppercorn seeds with peppercorn oil to cater to local taste. The latter is less intense hence the numbing sensation is not as pronounced. RRH used to use peppercorn in its earlier heydays but later switched to oil
You have got to try Chiming Mala @ Geylang Bahru Market & Food Centre. The place sells rather authentic Chinese food at a good afforable price. Likely due to the older population there. But man the mala is good as well. Their spiciness is good, not so much of the numbness since i think they try to cater to local taste buds. But please do try it.
harnessing your viewers' capabilities here - there used to be a mala stall at one of the coffeeshops under Simei MRT station called 大掌柜. their mlxg was THE BOMB. i mean, they deep fry their potato slices and LUNCHEON MEAT, the spice and numbness levels were ON POINT, and price was really legit. cannot locate them after the pandemic 😢 ANYONE KNOWS WHERE THEY ARE NOW PLS HOLLER AND ALDERIC PLS GIVE THEM A TRY!!
I would love it if you can give green on earth Mala a try. There is a twist though... you will know when you are there. A quick google of the place is sufficient to back my recommendation. Plus, its near batok.....
You have to try the MLXG at Prince George Park’s Residences. Not sure if the NUS students will appreciate you trying it out at the queues are already long to begin with 😅
Wan Xing Mala hotpot at kovan. They have abit exotic ingredients + healthier alternatives for noodles. I suggest putting their you tiao and duck in it. Esp the you tiao, they cook it very crispy and it soaks up the mala oil/taste when you bury it inside and it really packs a punch when you eat it.
These days all shortcut. If you observe how they cook, they boil everything in water to cook first, then transfer into wok and quick stir fry. Just like our Chap Cai Png to save gas. Unlike those days when Ri Ri Hong MLXG arrived at our shores, they are stir-fried totally till cook. Also they use same ML paste/sauce supplied to everyone.

Shisen hanten is the only place that make me crave mapo tofu. Shall try the one at new station rice bar
You should pick the same ingredient combination for each Mala for a fair comparison! Pork Belly, King trumpet, potato, egg, lotus root etc

Wan Jia Ma La Xiang Guo (万佳麻辣香锅) in Bukit Batok is my favourite Mala!

My personal fav is Mi Jie mala tang, their mlxg is decent but the mala tang is what I love. They get extra points for having a sauce bar too.
I bought the sauce from Sheng Siong and do it myself at home. Cheaper, better ingredients and also taste better!
Holland village foodcourt mala is the best! Queue is always long but worth the wait! Go for 大辣🥵

If you want an unconventional recommendation you can try the Mala stalls at NTU especially the one in Canteen 9 and Tamarind Canteen
I think those are the ones run by the NTU graduates right?
