Venom Glands (Poison type obviously, but maybe you could do something cool by combing other ideas into its concept), Photophores (Maybe fire type? For the sun? Or maybe you could go a moon direction, idk), A Gizzard (maybe Rock type because it is filled with rocks like a Dodo?) or Mental Glands (Something to do with letters possibly, because the mental gland does communication). If you were to do this again, I could like to see what ideas you have for some smaller organs like the lymph nodes, larynx, and hypothalamus. If you want another idea for a body part Pokemon look at glomerulus it's a very specific blood vessel in the kidney. Truth be told the model used in my anatomy class when I was in college was the SOMSO Glomerulus Model. The actual vessel to me looked a little like a seahorse.
