      how to pick the right butternut squash,.. is there a right time to cut it or know when it is ripe enough? there is no smell or squishy feeling

    Love this recipe from before. BTW, fanatical is an adjective to modify a noun, which would be a fanatic. So don't be fanatical. Sorry, an English major. As always, another amazing recipe😃

    Thank you very much for sharing the video. No butternut squash soup for the "fanatical "🤣🤣 I make mine similar to your receipe I just purchased Costco pre cut and peeled organic butternut squash and froze 3 containers of it. I boil my butternut squash and add sweetener and onions and spices. Delicious 😊

    I made this today, and it is so good! As I was roasting the vegetables, a friend stopped by and said that the kitchen smelled really good. The only change I made was I added garlic to the roasting pan as I was roasting everything else. Will definitely make this again.

    We do a similar family recipe like this. After it’s done cooking we add coconut milk. Rich and creamy with great flavour.

      @@JesusGonzalez-op4wl we make about 4-5 litres of soup at a time and add a 1 litre box of coconut milk as soon as it’s done cooking and stir it in.

    I am making this now. I added leeks, carrot & celery just because I had an abundance of them. Keeping mine vegan today. I may do a swirl of coconut milk at the end. We grew butternuts this year. Not on purpose, but used compost soil. Ended up with 4 different kinds of squash. Thanks for the recipe!

      Oh yes!! I’ve been an avid squash eater since my early 20’s (almost 20 yrs) and I still have not figured out how to properly cut it until this video!

      To make the squash easier to peel and cut, heat it in the microwave for about 5-8 minutes, depending on the size. So much easier to work with that way.

    As a former English teacher of 39 years, I have to agree with your husband (sorry!) You were using the noun ‘fanatic’ as an adjective. You should have been using the adjective ‘fanatical’. But thanks so much for this recipe! I can’t wait to make it!!!

    Thank you for this recipe Dani! I will try your method as I'm sure roasting the squash gives it more flavor depth. I make a quick butternut squash soup by preparing the squash as you did, adding the squash cubes and chopped onion into a pot with chicken stock and simmering until the squash is tender. Cool to room temperature, puree with an immersion blender and add seasonings of my choice. Reheat and serve. This soup also freezes well. It is quick to do!

    Nice technique -- really like this. I sensed that i wanted mine to be a little creamier so I held off half of the broth while blending and added a pint of cream during the final cooking. I also had a half a Fresno and half a Serenno pepper that I added to the veggie roast. Also my squash was small so I added a couple of sweet potatoes to the roast as well. Turned out very good and keeps well for a 2nd day reheat. Thanks for the vid!

    Mmm, I made this and it was AWESOME. Thank you!!! I did not use apples and I substituted 1tbs. coconut oil for the veg oil and I used vegetable broth. It tasted fantastic!!

    I just cut the squash in half, scoop out the seeds and roast. Once cooled I remove the squash skin. Super easy

    Made this as part of a Shabbat meal this past weekend to rave reviews. Actually made it a day ahead and gently reheated it - perfect! Still have a few toasted pumpkin seeds left from the garnish which will top today’s salad. Thanks for a lovely clean & delicious recipe. PS - used an immersion blender…works great and easy cleanup.

    This recipe is so delicious! I added Chile cayenne powder when blending and it gave it the perfect kick for my tastebuds! I love that you give us options and explain we can explore with other spices and/fruits or veggies. You are very talented and I really appreciate your videos.     I love this soup and this was a great vlog. This is almost identical to my recipe except I add nutmeg and/or turmeric and roast the butternut seeds and use them. Fanatic is a noun (person). Fanatical is an adjective. Cheers from Canader eh!

    I make quite a bit of butternut squash soup. I see no need to go through all the work of peeling and cubing. You can just the squash cut in half and roast the two halves in the oven, then scrape out the contents.

    This is definitely in my fall recipe books. I would recommend try roasting the butternut squash with maple syrup to add sweetness and put brown sugar then roast the squash in the oven. I would honestly blend it with sum sweetened or unsweetened apple juice and blend that together for a nice purée.

      @@CleanandDeliciousDani this is a copycat version of Panera bread butternut squash soup. This is the way I do it. If you can think anything fall related ingredients it will go well with the soup. And use canned candy yams for extra flavor.

    This looks so delicious! I'm already getting ideas of which "sweet" elements I can add to it. Maybe peaches, or another stone fruit?

    Funny. Two days ago my son was requesting butternut squash soup. We have one recipe that we really love but will try this one next week.
