I've been making this style potato salad for 60 years. This is the single most authentic American potato salad recipe I've come across. I'm glad I found you, because I'm old now, and I tend to forget things I used to know quite well. Lately I realized I had forgotten parts of mom's recipe for potato salad which dated back to before WW II. I made this tonight and this is it! During the war we ate a lot of potatoes, because meat was scarce and very expensive. After all, we had 17 million men in uniform. Thank you. You made an old man very happy.

I wrote this out for myself, so I figured I'd share and save you all the time. 3 lb russet potatoes, peeled and cut into bite size cubes 2 large eggs in shell, washed 1½ cups mayonnaise ¼ cup white sugar 2 tbsp sweet pickle relish 2 tsp distilled white vinegar 2 tsp prepared yellow mustard 1½ tsp salt ½ small yellow onion, diced 2 ribs celery, diced 2 tbsp instant mashed potato flakes Place potatoes and eggs in a large pot. Add enough water to cover by 1 inch. Bring to a boil, then lower the heat to a gentle boil. Cook potatoes and eggs for about 10 minutes or just until potato falls apart when pierced with a fork. Remove eggs and place in a bowl of very cold water. Drain potatoes and set aside until completely cooled. Peel the eggs, place in a large bowl, and coarsely break them up with a fork. Add the mayo, sugar, relish, vinegar, mustard, salt, onion, and celery and mix well to combine. Add the cooled potatoes to the bowl and gently fold into the dressing. Add the potato flakes and gently fold to combine. Refrigerate for 4-6 hours.
This is my "go to" potato salad recipe. I don't add as much sugar or mayo, but I like the potato flake idea. I also like some red in my potato salad, so I add 1/2 of a red bell pepper that I chop up finely in my food processor. I also add some grated cheddar, and I mash some of the potatoes. Damn good salad!! I live by myself, and don't get to make it often enough.
In addition to the celery I had added diced green and red bell pepper to give it a little hint of natural vegetable sweetness and added crunch to the celery in the recipe along with garnishing at the end with the green ends of scallions that I had in the vegetable crisper of my refrigerator. Excellent taste profile and well balanced. Thank you for sharing your recipe, a definite keeper!
I made this yesterday and it turned out great. I only used 1 cup mayo and doubled the mustard, used green onions and sadly had no potato flakes. It was a win!

Great instant mash flakes idea for binding yet I just mash a few of the cooked potatoes on the side to then fold in. The starch does the rest. Good show!

Hello there loved your recipe! I just made a few changes, instead of sugar I used sugarcane syrup didn't have celery so I chopped half a greenpepper and didn't add the potato flakes. My tastebuds were singing... Thank you for the video this recipe will sure be my base!!!!

Great basic recepie that everyone loves! I actually use your measurements for the dressing on my macaroni salad. I do tend to add more mustard and just 1 cup of mayo. And I just add olives, that's how my hubbys family does it and it's great. Good job

I have made a few minor changes based on the preferences of my family and friends, but this is the key to creating the (now super popular) potato salad that I make. The problem is that now I am the go-to person to make the potato salad!! The techniques and instruction were so helpful in correcting the issues I have had with other attempts at making potato salad. My modifications are minor--I make 5 lb at a time (because people want to take some home), so I scale up on the measurements. I like a salad with lots of egg, so I use 4 eggs instead of 2. I also swap out Dijon mustard for yellow and add chopped gherkins for an extra bite of flavor. I always make this a day ahead.
Can you do more videos on side dishes. It's always hard to come up with ideas to take to parties and family gatherings. Enjoy watching your videos, straight forward and easy to follow!.

50hellkat2 I don’t use potato flakes. They just seem to sound dry. I cute some smaller potato cubes and they will be softer so I let those fall apart in the salad or mash them against the bowel as I stir it up… 💓
Today was the 1st time I made potato salad... I made mine without eggs....I did basically... what you did here I made my dressing cooled it in a another bowl.....added this and that........my dressing my much like my macaroni salad....and I will follow these steps every time I make this. And it turned out great....
Lovely. When I boil eggs, I use the back of a spoon and hit the eggs 3-4 times just before they are finished cooking. In this way the water is allowed to sleep through the shell making it easier to peel off after I have placed them in cool water to cool off till manageable.

Brenda Metz I usually cook the potatoes whole and peel the skin after cooking. I add salt while cooking and love the potato taste better this way. However, this recipe seems easy to make as well
Your potato salad is very much like the way I make mine. I do cook my potatoes first before peeling. Either microwave or in a pot of water. That seems easier to me. I also like some sweet peppers in mine. I am 82 years old and have been cooking and baking for years. You salad I am sure is very good. Sue in Central Indiana
I've made my mother's version of potato salad many times. She's no longer with us to offer advice, so I turn to You Tube to learn. I like your process and advice on dicing and cooking the potatoes. It's very helpful. I do use Miracle Whip because it has the sugar and vinegar components already in it and that is what my mother used. Gotta go for that nostalgic taste. Her recipe did not use eggs or mustard, but I've thought of trying mustard powder. In addition to salt, she added black pepper and did use sweet relish.
Just made it. Fantastic recipe. I didn’t have celery today so shredded some carrots for the crunch. The smashed egg is a great touch. I don’t care for big chunks of egg in my potato salad. So that was great. And I only had chive instant mashed potatoes, figured how bad can that be. Turned out delicious. Oh and a little less sugar. But all in all I followed recipe and it’s fantastic. Never have I ever added sugar to my potato salad. l prefer red onion and dill pickle relish and a spicy mustard or a touch of dejon mustard I serve mine at room temp so delicious with a BLT!
I also like the potato flake idea. The one thing I wouldn't do is add sugar. My late mother-in-law would make potato salad out of left over mashed potatoes and when I worked and had little time I would make it quickly with instant potatoes.
I tried this recipe and it worked out pretty well. I made a couple of mistakes, nothing harmful but on the whole it turned out very well. I will make a couple of adjustments the next time and hope I get it down pat . My wife and I ate it all in two days with dinner as a accompaniment. Yep! This is THE ONE! I add a little more chopped hard boiled eggs, but everything else is spot on for the BEST potato salad. You still gotta have that mashed egg or 2 in there like you did to give it that slightly yellow color and yummy flavor. The only thing I have changed lately for my potato soups and salads is I bake them instead of boiling them. Once they are fork tender you can cool them on the counter and their jackets slip/peel right off before you chop and drop them. They seem to have a smoother/ less grainy texture and it's lovely-especially in a silky soup. Anyway, thanks also for the instant mashed potatoes trick- I actually use that trick for my deviled eggs so they aren't runny and falling out of the egg (you can pipe them on they are so thick), but I never thought to use in my potatoe salad. Baby rice cereal works well also. Thank you for the excellent video!
I like my food to look appetizing, so I use Red/Purple onions when I make potato salad. When making the salad dressing, I substitute 1/2 cup of sour cream for 1/2 cup of mayonnaise then add 1 teaspoon of gariic powder. I also add the instant potato flakes to the dressing before adding the potatoes.
I forgot to add, I do not boil my eggs in with my potatoes. I just can't see that being done. Having raised chickens, I know how dirty those eggs can get and they may not be cleaned off like you think. I do put a lot of eggs in my potato salad too, I no longer have chickens since last year but get my eggs from my daughter's chickens. We live in farm country. Sue in Central Indiana

Great recipe! I'm sure it was just an oversight, but it's imperative to add salt to the cooking water. Potato's are one of the most bland foods if salt isn't added while cooking.

I wrote this out for myself, so I figured I'd share and save you all the time.
3 lb russet potatoes, peeled and cut into bite size cubes
2 large eggs in shell, washed
1½ cups mayonnaise
¼ cup white sugar
2 tbsp sweet pickle relish
2 tsp distilled white vinegar
2 tsp prepared yellow mustard
1½ tsp salt
½ small yellow onion, diced
2 ribs celery, diced
2 tbsp instant mashed potato flakes
Place potatoes and eggs in a large pot. Add enough water to cover by 1 inch. Bring to a boil, then lower the heat to a gentle boil. Cook potatoes and eggs for about 10 minutes or just until potato falls apart when pierced with a fork. Remove eggs and place in a bowl of very cold water. Drain potatoes and set aside until completely cooled.

Your potato salad is very much like the way I make mine. I do cook my potatoes first before peeling. Either microwave or in a pot of water. That seems easier to me. I also like some sweet peppers in mine. I am 82 years old and have been cooking and baking for years. You salad I am sure is very good.

I've made my mother's version of potato salad many times. She's no longer with us to offer advice, so I turn to You Tube to learn. I like your process and advice on dicing and cooking the potatoes. It's very helpful. I do use Miracle Whip because it has the sugar and vinegar components already in it and that is what my mother used. Gotta go for that nostalgic taste. Her recipe did not use eggs or mustard, but I've thought of trying mustard powder. In addition to salt, she added black pepper and did use sweet relish.
Just made it. Fantastic recipe. I didn’t have celery today so shredded some carrots for the crunch. The smashed egg is a great touch. I don’t care for big chunks of egg in my potato salad. So that was great. And I only had chive instant mashed potatoes, figured how bad can that be. Turned out delicious. Oh and a little less sugar. But all in all I followed recipe and it’s fantastic. Never have I ever added sugar to my potato salad. l prefer red onion and dill pickle relish and a spicy mustard or a touch of dejon mustard I serve mine at room temp so delicious with a BLT!

I also like the potato flake idea. The one thing I wouldn't do is add sugar. My late mother-in-law would make potato salad out of left over mashed potatoes and when I worked and had little time I would make it quickly with instant potatoes.

I tried this recipe and it worked out pretty well. I made a couple of mistakes, nothing harmful but on the whole it turned out very well. I will make a couple of adjustments the next time and hope I get it down pat . My wife and I ate it all in two days with dinner as a accompaniment. Steak , Corn on the Cobb and of course your potato salad, just like a barbecue . Thank You.

Yep! This is THE ONE! I add a little more chopped hard boiled eggs, but everything else is spot on for the BEST potato salad. You still gotta have that mashed egg or 2 in there like you did to give it that slightly yellow color and yummy flavor. The only thing I have changed lately for my potato soups and salads is I bake them instead of boiling them. Once they are fork tender you can cool them on the counter and their jackets slip/peel right off before you chop and drop them. They seem to have a smoother/ less grainy texture and it's lovely-especially in a silky soup. Anyway, thanks also for the instant mashed potatoes trick- I actually use that trick for my deviled eggs so they aren't runny and falling out of the egg (you can pipe them on they are so thick), but I never thought to use in my potatoe salad. Baby rice cereal works well also. Thank you for the excellent video!
I like my food to look appetizing, so I use Red/Purple onions when I make potato salad.
When making the salad dressing, I substitute 1/2 cup of sour cream for 1/2 cup of mayonnaise then add 1 teaspoon of
gariic powder. I also add the instant potato flakes to the dressing before adding the potatoes.
so in other words an entirely different recipe.

I forgot to add, I do not boil my eggs in with my potatoes. I just can't see that being done. Having raised chickens, I know how dirty those eggs can get and they may not be cleaned off like you think. I do put a lot of eggs in my potato salad too, I no longer have chickens since last year but get my eggs from my daughter's chickens. We live in farm country.

just want to say I love this it's hard to get my children to eat anything in one bite of this they ate all of it and then I had to make more for my wife the children were meant to be taste testers to see if maybe she would like it and it was a hit I will be sure to come back for more recipes thank you so much

Great recipe! I'm sure it was just an oversight, but it's imperative to add salt to the cooking water. Potato's are one of the most bland foods if salt isn't added while cooking.
I always add salt to the water when boiling potatoes.
