My neighbor has his own backyard garden, and for whatever reason I would sometimes see corn and tomato vines growing underneath my bushes. I would usually just let them grow and so I could get fresh corn and tomatoes
I have just let a plant of bok choi go to seed. It does not take very long to seed, produces so many seeds, and the bees etc love it. And it looks pretty too.

Pepers are super easy. I accidentally left a fruit outside where it dried out. The seeds ended up becoming the best for resowing. So it was nice to know I don't have to left the fruit on the plant to dry. Just be careful with wildlife
*And don't forget to save seeds for flowers*....you need pollinators as much as they need your flowering plants. Set out some water, changing it every couple days, & you'll deter birds from pecking your tomatoes searching for a drink. That all depends on where you live. The easiest way to know is to figure out the length of crop, seed to harvest. Find out your first fall frost day, add a week or so, then work backwards. That's the day you start your fall crops. :-)
I'm struggling with green onions even growing, let alone getting to the point where I can save seeds! LOL But I'm definitely saving seeds from the rest this year. It'll be the first time I save seeds from my lettuce but it does look super easy.
And I often are leave the seeds in there too long, I guess. How do you know when to say when?‘s like for the onion you said when it falls over; are there any other telltale signs of the best mature time to pick to seed?
It all depends on the plants. For green onions, I definitely don't wait for it to fall over. Once those seed heads dry, if they fall over, the seeds go EVERYWHERE!

While picking fruit often begets more flowering and more fruit, leaving fruit on doesn't really give plants the signal to stop. Temperature, moisture, photoperiod, light intensity, and circadian rhythm are the main clues.
how about a quickie about what not to plant next year in a spot where a certain crop is this year. I am already thinking about next year but understand certain crops should not be planted in a spot that has certain crops this year. 👣👣👣👣👣👣🍉🥕🍆🍓🫐🌶🥒🥬🥦🧄🧅😊🤣👀
