I got into Gundam because "Ha ha, giant robot fights!" and stayed for the explorations of the darkness of the human condition that are pinpricked with spots of compassion. When I need a fun popcorn fodder space opera, I have Star Wars. When I need something deeper that makes me feel a thing, I go to Gundam.

Explosives cause higher rates of terror and ptsd in adition to higher rates of death and causlties. The explosives themselves cause ptsd by altering brain chemistry.
Also before ww1 wars had less destruction to civilians and infrustructure, and smaller % of casualties, espeically for the winner. And most causlties were from decease that was only slightly above regular mortality rate.

Gundam shows how easy it is to start a war, and how hard it is to end it. even after the One Year War officially ended, Zeon fought on for decades, never letting go of their hate for the EFF. the Zabi's assassination of Char's father started a domino effect, very much like how World War 1 started.
Star Wars was starting to drift into moral grey by showing the bad guys weren't as bad as we thought with 2005's Battlefront 2 showing the Storm Troopers view of the Rebellion. they believed they were bringing true peace to the galaxy and the Rebellion was just a bunch of terrorists that burned down everything in sight for no good reason. Storm Troopers weren't evil, they just happened to work for a Sith. but then when Disney bought the rights, we went right back into light vs dark. we good, they bad, end of story.

If Degwin never got Deikun out of the way the EF would have steamrolled his protests and killed him and his family anyway. Degwin Zabi was smart, and regretted killing his friend, but if Munzo didn't respond with force to the EF and if Degwin didn't make Deikun a Martyr there wouldn't be a side 3 anymore. The war was inevitable at that point. Poisoning Deikun and blaming it on the EF was the only way to get Munzo the numbers advantage they needed to fight a winnable war against the EF. It's equally implied that the Federation poisoned Deikun or that the stress killed him as it is implied the Zabis did the deed. Most we hear of the third theory is from Deikun followers that evaded an initial purge after the death of one of Degwin's sons via Carbombing.
Just another reason why I like Gundam, some elements aren't as clear cut but there is plenty of reason to believe either one of the three theories I listed. (Feddies didn't want the colony declaring independance and thought Zeon's death would make Side 3 more heavily rely on them to bring order, Deikun worked tirelessly to bring prosperity to Munzo Colony (and Side 3 itself) only to die because of the stress and the reason you gave earlier)

When he worked on Char's Counterattack he practically didn't care for what happened in Z. In any case, the original Gundam is a story about a self-centered boy who learns to accept his responsibility and understand other people, aka a Newtype. The story ends with Amuro saying he's found a place he wants to come back to, even though that won't let him join with Lalah. Other members of the White Base crew also show their growth, especially Bright, Mirai and Kai. If this is not a coming of age story I don't know what is.

The last third of the series was all about his awakening as a Newtype and becoming distant from everyone else. There is an element of growth there but it is entirely different from some glorious hero of the kingdom, saving the princess-style story of Star Wars.
I don't think Gundam's a typical science-fantasy coming-of-age story but more like a story of the war from the perspective of a youth/conscript forced into it, and various other people involved. All of them are changed by the experience but not all of them are for the better.

Gundam is dark, but in a very realistic way (as opposed to dark for the sake of dark, like WH40K). There is no clear good guy or bad guys in most cases. In UC, it's a corrupt federation fighting a fascist regime, and we see stories with protagonists on either sides, sometimes you want to root for the "bad guys", like Mafty, a group of terrorists aims to topple the corrupt government by assassinating politicians. 00 explores the eradication of war through violent interventions, and shows that the population don't care about war unless it happens to them. The prequels of Star Wars portrays a lot of politics and the reason behind the war, but the sequels are much more shallow.

The original Gundam series is pretty much the only truly mandatory viewing you need in order to watch anything else in the universal century timeline, but it does also help to watch its direct sequels.
Gundam 0079 is followed up by Zeta Gundam which is in turn followed up by Gundam ZZ. Zeta is seen as the Empire Strikes back of Gundam, a darker and more serious improvement over the slightly more silly and colourful original. ZZ is generally hated for being a much more silly and comedic sequel to Zeta, which was apparently to make up for how dark the ending of Zeta was considered at the time. Personally I didn't like either very much, though I did think Zeta had some great episodes while ZZ had some insufferable episodes, though the latter does see considerable improvement in its second half. This trilogy of shows concludes with the movie Char's Counterattack. Watching all of these gives the appropriate context for Gundam Unicorn, which is my personal favourite Gundam series. While again, all you really need to have see is the original series to understand the important parts of Unicorn, watching all 3 shows and the movie really improves the experience.
For a less potentially daunting sounding recommendation, there are multiple spinoffs set during the One Year War of the original series: War in the Pocket, 08th MS Team, Stardust Memory, and Thunderbolt (Although Thunderbolt is considered to take place in a slightly different universe with more over the top mobile suits). Of those I've only seen 08th MS Team and Thunderbolt, and I'd recommend both as more down to Earth stories about regular mobile suit pilots. Thunderbolt is especially good as it portays both the Federation and Zeon characters in equal spotlight, getting you to like characters on both sides and making their fights feel quite tragic.
Outside of the Universal Century there are multiple Alternate Universe shows, which they started making to make the franchise more accessible. These include G-Gundam, Gundam Wing, Gundam X, Turn A Gundam, Gundam Seed, Gundam 00, Gundam Age, Gundam Iron Blooded Orphans and the currently upcoming series The Witch From Mercury. These are all completely self contained series, though Gundam Seed has a sequel series called Gundam Seed Destiny. They largely all follow similar formulas, but G-Gundam is distinct for being a much less grounded show about a fighting tournament between Gundams. Of the ones I've seen, I'd personally recommend 00 and Iron Blooded Orphans.
In summary, if you want to see what happens to the world next, watch Zeta. If you want more stories set during the war, watch Thunderbolt or 08th MS Team. If you want to watch a completely new show, watch 00 or Iron Blooded Orphans.

Well....I could muddy the Waters by referencing stuff from KOTOR 2 and much of Star Wars Legends Prehistory.
....But I don't think I could say that with a Straight Face if we countered that by giving Gundam the Rest of the Universal Century to work with from the Expanded One Year War events and series set parallel to the Original Mobile Suit Gundam Anime. And that's BEFORE you get into 0080, Zeta, Double Zeta, Char's Counter Attack, Unicorn etc...

G-Gundam: THIS HAND OF MINE BURNS WITH AN AWESOME POWER
    Build: Wow, Cool Robot!
Iron-Blooded Orphans: Actually, being a child soldier is fine, I don't care anymore.

UC NT: So you see... we put the brain of a little girl with psychic powers, inside a prototype of a thing that is capable of enhancing said powers, who knows how much!
.... Hey why is it moving on its own?...

fans there's also extended lore for the disney canon, which, isnt as good but still has interesting stuff in it
The mandalorian, clone wars, and rebels are SOLID stories that extend lore
