Good job. For the header think two into one and pick a side for the spark arrestor and muffler. Start with the header furthest from the muffler. Weld the exhaust closest to the muffler into the long header.
Hi Dave, I think your suggestion is very sensible, but I really like the idea of twin exhaust to show it's clearly a twin engine. That may well turn out to be a foolish choice.
Hi Ryan, Great to hear it running, You mentioned before going to single carb set-up. That would sort out the petrol tap problem as the carb would be in the middle. I have heard that a 250 Honda rebel manifold and single carb will fit these engines also possible XL 250 carb onto Rebel manifold. But it is only hearsay so check first.
Hi Paul, I would consider a single carb if it would fit, but doubt that as the spine of the frame runs really close the carbs. However, I have a plan for the petrol tap, which may or may not be sensible.

Probably very difficult to cut and weld that pipe to go over the engine and make it look good, what about just going off the headers as they are, upswept pipes following lines of subframe, silencers out straight at the rear.

@@RyansGarageUK You might think about crossing the headers if you want two pipes. A severe 180 will affect performance on a carb engine.
