What a cool dude . I love that he starts off with asking about sefradic and Ashkenazi food. I wouldn’t say the majority of us are spain more Middle East North Africa . ( althou certainly many were in Spain before kicked out)
Actually most of the sefaradim come from Spain and North Africa as Morocco and Tunisia were the second home to the Jewish people at the time of Babasale and the abuhassera family. Even before but before the inquisition in the late 15th century, Most Jews in general were in Europe and a big part of that was Spain and France where Spanish had the majority of the Sefardic community and France had the second biggest sefaradic community with also ashkenazim like Rashi.
Then from Spain they went to the closest place Morocco and some went to Syria and turkey where they influenced the sefaradic traditions further with their national cultures.
