"Crack Potatoes": The BEST Potato Recipe for Camping | Easy Camp Cooking

  • Easy things to cook while camping is just part of daily life as a full-time nomad. Recipes need to be simple, cheap, and delicious. These "crack potatoes" check all the boxes. You won't find a more versatile or budget-friendly meal that can be served with virtually anything, no matter the time of day. Not only that, but this recipe can be dressed up or down with ground beef, sausage, and especially BACON. Add an egg or two if you want. Throw in some cabbage and corned beef for the best corned beef hash of your life! Of course, it can be enjoyed simply as is for a more vegan-friendly alternative as I show in the episode.
    Basic "Crack Potatoes" recipe for 1-2 people:
    Two medium to large potatoes (Yukon Gold are best)
    One small onion (or half a large one)
    Two to three cloves of fresh garlic or a heaping teaspoon of prepared (jarred) garlic
    Two to three green onions
    Butter and/or olive oil
    Salt
    Black pepper
    Paprika (optional)
    Chilli powder (optional)
    Best prepared in a medium skillet/pan. Use enough olive oil and/or butter to coat pan at medium-high heat or more to taste. Careful not to burn your butter!
    Rough chop potatoes into approximately half-inch (1.3cm) pieces. Onions can be cut to any size but remember the bigger they are, the longer the cooking time. Garlic can be minced or crushed. Green onions should be cut small enough to use as a final garnish.
    Once the skillet/pan with the oil/butter is up to temperature, add your chopped potatoes and stir until fully coated. Add salt to taste. Allow the potatoes to brown on one side (usually about 5-8 minutes) stir again and to ensure even cooking. Cook until potatoes are beginning to soften before adding the next ingredients.
    Add in your chopped onions and mix. More oil/butter could be required as well.
    Allow the onions to sweat with the potatoes stirring once every 3-4 minutes until they are softened.
    Add minced garlic and mix thoroughly.
    Add pepper and any additional seasonings to taste.
    Garnish with minced green onions and enjoy!

    i burnt the garlic last time i did this 😢 but i learned recently that dehydrated garlic (that you re-hydrate prior to cooking) won't burn under high heat and its what asian restaurants use for stir fry, I'm going to try your method out, except with that substitute
